Why I’m Doing This Pop-Up?

Next month, I’ll celebrate eight years booze-free. I remember thinking back then that my life was over. I had no idea it was only the beginning. In those years, I found my career cooking for those who are where I once was, I met my wife, we had our daughter, and together we started Belt Buckle Catering.

I’ve imagined doing something like this pop-up for a long time, and it’s finally coming to life. I’m excited to see people show up, have fun, and leave full and happy. That’s what I love, sharing good food and seeing people enjoy it and if that happens, I'll call it a success.

And who knows? Maybe someone who stops by for tacos will think of us the next time they’re planning a wedding, birthday party, or big event.

At the end of the day, it’s about doing something I love, with and for the people I care about, in the community that’s given me so much.
