Happy Monday, and a Thoughtful and Restful MLK Day to you! The frost hit the Carolinas last night, so I hope you're staying warm and cozy, wherever you are!
Last week, we showed you the graphics that broke down the structure of the Sourced to Serve Equity Model for each slice of the pie.
That's all well and good, but for many, the meaningful information is in this last graphic. What are the actual numbers? 35% of nothing is... Well, nothing, so what's the full pie?
The plan for this model at the example of 50 people is to charge $150/ticket. That's a total of $7,500.
Simply put, the percentage to dollar translation would be as follows:
Chef: 35% = $2,625
Venue: 20% = $1,500
Farm: 10% = $750
Music: 8% = $600
Service Staff: 7% = $525
Sourced to Serve: 20% = $1,500
On the consumer side of this, there's another benefit: No Tips Required. Many consumers who were interested in this model often factor in a 20% tip for their meal, so if they're paying $150 for a plate, they expect to tip the wait staff $30, and the musical entertainment anywhere from $10-$20. That adds another $80-$100/couple for the night! When they know everyone is getting paid well, and going home with a meal, they expressed that they were far more inclined to purchase a ticket to events like this on a regular (quarterly) basis.
