Big bucket of quinoa.

TIPS:

✳️ when steaming quinoa use a pinch of salt and vegetable broth, or bone broth for enhanced flavor.
✳️ when making a cold salad, spread cooked quinoa on a baking sheet in one thin layer to avoid over steaming and to rapidly cool.

AFRICAN PEANUT STEW

3 pounds bone-in chicken thighs, with skin
3 tablespoons vegetable oil

1 large yellow or white onion, sliced
1 medium piece of ginger, grated
6 garlic cloves, chopped roughly
1.5 pounds sweet potatoes, peeled and cut into chunks

1 15-ounce can of crushed tomatoes
1 quart chicken stock
1 cup peanut butter, organic
1 cup roasted peanuts
1 tablespoon ground coriander
1 teaspoon cayenne, or to taste

Salt & Black Pepper, to taste
1/2 cup chopped cilantro, for flavor and garnish

Serve over rice and pair with sautéed greens such as collard, dandelion or mustard.

Rack of Lamb Rub Down

Avocado oil 🥑
Ground mustard
Lemon Juice 🍋
Oregano
Garlic, minced
Salt & Pepper

Marinate 3-6 hours
Grill direct 10 minutes, or until nicely charred
Grill indirect, 30-40 min
