Roasted Peach Gouda Grilled Cheese

Ingredients:
4 slices whole grain bread
4 ounces Gouda cheese, sliced
1 ripe peach, thinly sliced
2 tablespoons honey
2 tablespoons balsamic glaze
2 tablespoons unsalted butter, softened
Directions:

Preheat a skillet or griddle over medium heat.
Spread softened butter on one side of each slice of whole grain bread.
Place a slice of Gouda cheese on the unbuttered side of 2 slices of bread.
Arrange the sliced peaches on top of the Gouda cheese.
Drizzle honey and balsamic glaze over the peaches.
Place another slice of Gouda cheese on top of the peaches.
Place the remaining slices of bread on top, buttered side facing up.
Place the sandwiches in the preheated skillet or griddle and cook until golden brown and crispy on both sides, and the cheese is melted.
Remove from the skillet or griddle and let cool for a few minutes before serving.
Cut the sandwiches in half and serve warm.
Prep Time: 5 minutes | Cooking Time: 10 minutes | Total Time: 15 minutes

Servings: Makes 2 sandwiches

Let's Cook:
1. Preheat Oven:
o Preheat your oven to 425°F (220°C).
2. Season and Sear Beef:
o Season the beef fillets generously with salt and pepper. Heat olive oil in a large skillet over high heat. Sear the beef fillets until browned on all sides, about 1 minute per side. Remove from skillet and let cool.
3. Make Mushroom Duxelles:
o In the same skillet, add butter and sauté mushrooms and garlic until all the moisture has evaporated and the mushrooms are golden brown. Season with salt and pepper. Deglaze the pan with white wine and cook until evaporated. Remove from heat and let cool.
4. Assemble Beef Wellington:
o Roll out puff pastry on a lightly floured surface. Spread a thin layer of Dijon mustard over each beef fillet. Place a portion of the mushroom duxelles in the center of each pastry sheet and top with a seared beef fillet. Wrap the pastry around the beef, sealing the edges tightly. Monte Cristo Sliders

Ingredients

▢12 King's Hawaiian sweet rolls
▢6 slices mild cheddar cheese
▢1 pound roasted turkey deli meat
▢1 pound honey ham deli meat
▢6 slices Swiss cheese
Topping
▢¼ cup (57g) unsalted butter, melted
Dipping Sauce
▢confectioners' sugar, for topping
▢red raspberry preserves, for dipping

Instructions

Preheat the oven to 350°F. Spray a 9×13-inch baking dish with nonstick cooking spray.
Split the rolls in half. Place the bottom halves of the rolls in the prepared baking dish.
Top with the slices of cheddar cheese, roasted turkey, honey ham, and finally, Swiss cheese.
Place the top halves of the buns on top.
Brush the tops of the rolls with melted butter.

Cover the dish with aluminum foil and bake for 20 minutes, or until the cheese is hot and bubbly.
Remove foil and bake for an additional 5 minutes (or until the tops of the sliders turn a golden brown).
Remove from oven. Allow the sliders to cool for about 5 minutes.
Dust with confectioners' sugar and serve warm with raspberry preserves for dipping.

Jalapeno Peach Chicken
Ingredients:
Peaches:
2 yellow peaches, pitted, sliced
Peach Glaze:
½ cup (160 g) peach preserves
1 tablespoon extra virgin olive oil
1 teaspoon soy sauce
1 teaspoon apple cider vinegar
1 teaspoon Dijon mustard
½ teaspoon garlic, minced
½ teaspoon kosher salt
⅛ teaspoon black pepper
⅛ teaspoon red pepper flakes
Chicken:
2 pounds boneless chicken thighs
1 teaspoon kosher salt
½ teaspoon black pepper
½ teaspoon chili powder
2 tablespoons extra virgin olive oil
1 medium jalapeno pepper, thinly sliced
Directions:
Peach Glaze: In a medium bowl, mix all the glaze ingredients until incorporated. Set aside.
Chicken: Pat the chicken dry. In a small bowl, combine the salt, black pepper, and chili powder. Rub this
seasoning mixture onto the chicken. In a large nonstick skillet over medium heat, heat the olive oil. Once
hot, add the chicken thighs and cook for 5 minutes on each side, reducing the heat to medium-low after
flipping, until the internal temperature reaches 165°F. Remove from heat, transfer to a plate, and tent to
keep warm. In the same skillet, increase the heat to medium, add jalapeno slices, and cook for 3 minutes.
Add the sliced peaches and cook for another 3 minutes until softened. Pour in the prepared peach glaze,
stirring to coat the peaches and jalapenos evenly. Return the chicken to the skillet, spoon the glaze over
the chicken, and cook for 1-2 minutes until the chicken is thoroughly heated.

Trainwreck Grilled Cheese

Ingredients

8 slices of bacon
1 Tbsp good quality whiskey
2 Tbsp good quality maple syrup
1 Tbsp brown sugar
8 Tbsp salted butter at room temperature, divided
1 large onion, thinly sliced
Salt and pepper to taste
1/3 cup mayo
4 tbsp grainy Dijon mustard
6oz Arla Dofino's Gouda
8 slices sandwich bread of your preference

Instructions

TO MAKE THE GLAZED BACON:

Preheat your oven to 350F degrees.
Start by adding the whiskey, the maple syrup and the brown sugar to a medium sized bowl. Whisk everything together until well combined.
Add the bacon and toss it until evenly coated with the maple-whiskey mixture.
Line a baking sheet with foil and place an oven proof baking rack on top.
Lay the bacon on the baking rack in a single layer and bake it for 15 to 20 minutes or until the bacon is cooked and crispy.
Drain the bacon with paper towel and, once cool, cut the bacon slices in half. Reserve.

TO MAKE THE CARAMELIZED ONIONS:

Heat 2 tablespoons of butter on a large skillet. Add the onions and cook over medium heat for 25 to 30 minutes, stirring every now and then, until the onions are caramelized. Season with salt and pepper. Reserve.
TO MAKE THE MAYO-DIJON "SAUCE":
Combine the mayo and the grainy Dijon mustard and mix well using a spoon.

TO ASSEMBLE THE GRILLED CHEESE:

Lay the bread slices on a board.
On 4 of them, spread each with 1/2 tablespoon of butter. On the other 4, spread some of the Mayo-Dijon sauce.
Add the grated cheese to the buttered slices. On top of that, pile the bacon and the caramelized onions. Top with the remaining slices, sauce side down.
Butter (1/2 tbsp per slice) the outside of the sandwiches.
Preheat your grill over medium heat for at least 5 minutes. Add the sandwiches and grill for 3 to 5 minutes per side or until the cheese is melted and the bread is toasted.
Allow the sandwiches to cool for a few minutes, cut them in half and serve.

Dive into the flavors of this homemade Spicy Baby Tomato & Sweet Pepper Chutney - your cheese boards will never be the same! 🧀🔥

Ingredients:
2 cups baby tomatoes, halved
1 red sweet pepper, finely diced
1 yellow sweet pepper, finely diced
1 cup red onion, finely chopped
1 apple, peeled, cored, and finely diced
1 cup white vinegar
1/2 cup brown sugar
1 teaspoon salt
1 teaspoon ground turmeric
1 teaspoon mustard seeds
1/2 teaspoon chili flakes (adjust to taste)
1 cinnamon stick
Directions:
In a large, heavy-bottomed saucepan, combine all the ingredients.
Bring the mixture to a boil over medium-high heat, stirring frequently to ensure the sugar dissolves completely.
Once boiling, reduce the heat to low and let the chutney simmer, uncovered, for about 1 hour or until it thickens and the flavors meld together. Stir occasionally to prevent sticking.
Remove the cinnamon stick and allow the chutney to cool slightly before transferring it to sterilized jars.
Seal the jars while the chutney is still warm. Allow to cool to room temperature, then store in a cool, dark place.
Prep Time: 15 minutes | Cooking Time: 1 hour | Total Time: 1 hour 15 minutes

MUSHROOM MELT GRILLED CHEESE

INGREDIENTS


For the Mushrooms:
▢1-1 ½ Tablespoons butter
▢2 cloves garlic
▢4 ounces mushrooms shiitake, button, cremini, etc.
▢1 teaspoon soy sauce
For the Mushroom Melt:
▢1 cup fresh spinach chopped
▢½ cup shredded cheese gruyere, mozzarella, provolone all work here
▢red pepper flakes or cayenne pepper
▢1 Tablespoon butter
▢4 slices bread hearty wheat/seedy/whole grain bread is the bomb

INSTRUCTIONS

For the Mushrooms: Melt the butter in a large skillet (mine is nonstick) over low heat. Peel the garlic and crush it with the flat side of your knife, then slice it into strips. Add to the butter and cook over LOW HEAT for about 2 minutes. (It should not brown. If it does, the heat is too high.)
Wash the mushrooms and slice them into ⅛-1/4 inch slices. Add to skillet, and stir to coat with butter, then spread out. Cook undisturbed for 5 minutes. Stir and cook 5 minutes more. Increase the heat to about medium-low and cook for about 5 minutes to brown the mushrooms.
Finally, add a splash of soy sauce (about 2 teaspoons). Stir well and cook for just another 30-60 seconds. Taste and adjust seasoning as necessary.
For the Mushroom Melt: Combine the spinach with the mushrooms and sauté just until the spinach has wilted. Place in a bowl and mix with the shredded cheese and cayenne or red pepper flakes. (If using slices, I recommend ripping them up and combining them with this mixture.)
Stovetop: Melt the 1 Tablespoon butter in the skillet and place two pieces of bread in the skillet. Top with the mushroom-spinach-cheese mixture and the other two slices of bread. Grill for a couple of minutes, until the bread has gotten dark and crispy. Flip and cook the other side another few minutes. Remove from heat, slice in half, and serve!
Toaster: Top two slices of bread with the mushroom-spinach-cheese mixture and place in toaster (maybe on a toaster sheet to avoid spillage). Place the other two slices of bread in the toaster as well. Toast on about medium for 4-8 minutes. Every toaster is different so be sure to check your bread often! Close up the sandwiches, cut in half, and serve.
