Tonight in the Douds Mafia BBQ kitchen we did pizza night.🍕🍕

Well actually it was pizza boats and man were these killer. French bread then homemade pizza sauce, then we added some sausage and pepperoni and topped it with some shredded smoked pepper jack cheese. Topped it with some Damn Yankee Texas BBQ Pinstripe Paisano Italian Blend and that seasoning just added a blast of flavor. Definitely love doing these easy week night meals.

Happy belated Fathers day to all the dads in everyone's life. Yesterday we decided to smoke a brisket. Instead of doing low and slow we did hot and fast.

Thank goodness for a little shelter or else we would of been getting wet all morning making a delicious brisket. We had the drum fired up with Royal Oak Charcoal and the needle was upright all cook at 300. The brisket we had was already cut at the point and flat and after some trimming it was ready to be seasoned. As always we used Heath Riles BBQ Garlic Jalapeño as our base layer and then sprinkled on some Heavy Smoke BBQ Black Label rub and this created an amazing flavor profile.

After the bark was set it was wrapped up with some beef broth and butter. Once it hit an internal temperature of 201°f we put it in a cooler tell it was time to slice it up and enjoy.

Do you have left over buffalo chicken dip, we did too and instead of eating it with just chips we got a little creative.

Now I know buffalo chicken dip is pretty amazing as is, but its fun to get creative with your meals. We made a homemade pizza crust then added the leftover buffalo chicken dip to the crust. After that sprinkle it with some mozzarella cheese and into the oven it goes. I would recommend giving this a try to spice up meal time.

We might not have been as active in the last few weeks, but that doesn't mean we have stopped cooking.

This last Saturday was a busy one for us. Early Saturday morning we had the drum fired up. The first cook was a pork butt we did and even though it wasn't cooked for us to enjoy we did snag a peice or two during shredding it up and it was supper delicious.

Next up we did some kind of meal planning. Friday night we made a big batch of brine and soaked 4 whole chickens for 12 hours. After we rinsed the brine off we cut the birds in half and hung them in the smoker. After 2 hours of making the air outside smell amazing we pulled the meat off the bones and made a few different sandwiches and quesadilla. The rest of the meat is getting froze to use on a rainy day.

Little comfort food to go with the stormy weather last night. Some Mississippi pot roast with mashed potatoes seasoned with Kinder's Cowboy Butter (definitely recommend adding this to your potatoes) and some sweet corn.
