Caprese got boring. So we messed with it.
Tomato and mozzarella stay. Everything else goes off-script.
Balsamic gets booted for a dark soy + clover honey reduction. Olive oil trades places with toasted sesame. Genovese basil gets kicked to the curb for holy basil and fruity purple basil.
It looks Italian.
It eats Southeast Asian.
A little sweet. A little salty. A little funky. Completely Trosko.
Our new signature Caprese. Familiar enough to recognize. Rebellious enough to p**s off a purist.
