What to do with trimmings? For now we grind, vacuum seal use for our family. We are currently working to make our own sausage to serve on the truck. We also have plenty of fat to make use of tallow. We really work to have minimal waste even if we can't make it public. In the future we are hoping to move toward a manufacturing licence to bottle and sell our sauce as well as packaged cooked meats for Sous Vide.
