27:31. That’s how deep we are into this brisket cook. These giant briskets from these very well fed, very well finished cattle are taking their sweet time in the long, luxurious pecan smoke bath. Long feed/finish times due to the supply chain snarl/meat processor Covid crisis are resulting in HUGE briskets that are exceptionally well marbled. Low and slow. Low and slow. Low and slowwwwwww. We’ll sleep someday!
