🥘 On our menu we are debuting our Black and White Adobo. This dish is comprised of Adobong puti (white adobo) chicken. Meaning it’s slowly braised in vinegar, bay leaf and peppercorns. 🙅‍♀️No soy sauce, so that means it’s also gluten free. It’s paired with our atchara (pickled green papaya and veg), fried garlic chips and then topped with the crowning glory…black garlic adobo sauce.

🥜 We will also have our famous Adobong Mani (garlic fried peanuts).

🌱 Come see us at Garlic Fest, aka plant daddy/mommy and foodie heaven.

What is modern Filipino food?

It is ever changing and taking shape through many hands in kitchens all over the world.

To paraphrase the words of chef Amy Besa of the great Purple Yam restaurant; Filipinos are resourceful and will use the ingredients they are surrounded by and interpret those ingredients through their “Filipino” palate.

This mushroom adobo quesadilla is wrapped up in all the vibrant local ingredients we are surrounded by. Juicy Palisade peaches 🍑, incredible heirloom tomatoes 🍅, smoked Oaxaca style cheese 🧀.

It also shows how many local farmers and producers we can support in just one dish. Backyard Market in Black Forest hosts some of the best farmers, makers and producers. Don’t miss out on the most delicious way to support local!
