Hey there Neighbors.

This weekend we'll be collecting donations for the National Alliance for Mental Illness in remembrance of Julie Foster, who did many wonderful things for our neighborhood and the broader Colorado Springs community. Julie helped bring NAMI to Colorado Springs as one of the founder of the local chapter.

NAMI provides a number of wonderful programs in support of mental illness in the community including support groups, community resources, and educational classes. You can head to their website for more info on what they do. namicoloradosprings.org

We'll be collecting donations at the register this Memorial Day Weekend (Saturday 23rd - Monday 25th).

The Philippine American Chamber of Commerce of Southern Colorado - PACCSoCo is holding this year's Kick-Off and Orientation of its signature program, the .

The is a 12-week business incubator that is offered to interested entrepreneurs, entrepreneurs-in-waiting, students, and professionals.

offers full scholarships to these individuals.

Now in its 3rd year, has helped attendees have a clearer path towards entrepreneurship and has helped those already with businesses sharpen their business skills.

To date, has 47 alumni who have benefitted from the program and who have availed of the full scholarships offered by .

The Kick-Off's main speaker this year is Chef Katie Fisco* who will be sharing her own journey as an entrepreneur and who will give an overview of the program to the 3rd Cohort -- the .

*Chef Katie Fisco is a Filipina-American chef, entrepreneur, and community leader based in Colorado Springs.

She is the Chef/Owner of Baon Supper Club, , a modern Filipino pop-up restaurant centered around storytelling, culture, and connection.

Inspired by her Filipina heritage and raised by a mother from Nueva Ecija in the Philippines, Katie creates immersive chef-led dinners that blend traditional Filipino flavors with contemporary culinary techniques.

A graduate of Pikes Peak State College with degrees in Culinary Arts, Restaurant Management, and Pastry Arts, she has over a decade of experience in restaurants across the Mississippi Gulf Coast and Colorado.

Beyond the kitchen, Katie is passionate about uplifting small businesses and building community through food, serving as a leader within the Philippine American Chamber of Commerce of Southern Colorado ( ). She helped launch ASENSO in 2024 and served as its Program Officer that year.

Katie was PACCSoCo's 2024 Gawad Kultura awardee and currently serves as 's Director for Special Projects and Community Relations.

BTS: Inventory!

These are the little things that add up to so much.

Staying organized and keeping track of ingredients is important, but definitely not as fun as cooking.

A chef I worked for once, took me to the dry storage shelf and then to the walk in and freezer.

“What do you see on these shelves, Katie?”

“Ingredients?”

“Wrong. You should see money. This is all money sitting on the shelf.”

Though it’s not my favorite way to view ingredients, it is at times, necessary.

To cap off Mile High Asian Food Week we shared some kapwa time together.

Asin at Sunog ( Salt and Burn) was special for so many reasons.

🎤 TJ Simba-Medel opened up our night with a spoken word piece. It was a proper Filipino welcome. We carry burdens together, we carry our traditions together, we share meals together and we celebrate-together. Maraming Salamat pinsan!

🧂 🔥 Our dishes walked everyone through the different salts and cooking techniques (smoke) from various regions of the Philippines. A crowd favorite was the P**o Calasiao. Sour, sweet and fluffy.

🧋We ended the night with a surprise….”TAHOOOOOO” There is a spirit of youthful giddiness that is inevitable with taho. So simple, yet warm and comforting.
