Testing ideas for July 11 at Cepin’s on Central and this one’s starting to feel right.

Muffuletta crostini on toasted sourdough baguettes from Niedlov’s Bakery with house made olive salad, layered Italian meats including: Bresaola from the Spotted Trotter, salami, and prosciutto, and shaved sharp provolone.

Also working on peach caprese skewers using fresh Georgia peaches I picked up on my recent trip to South Georgia.

Southern summer meets a little New Orleans energy.

Still building the menu still taste-testing. 🍑🥖🫒

Test kitchen days:
If this sourdough became a regular thing… what should we call it?

Working on sourdough alongside boards, pairings, and grazing menus. Turns out meat and cheese people eventually become bread people.

Took a road trip to Atlanta this week to visit The Spotted Trotter Charcuterie to taste test possible additions for future Gather & Graze boards, and… it was worth the trip.

Tried several beautiful cured meats, talked flavor profiles, and came home inspired. Beautiful Bresaola, incredible Hatch Chile Salami, amazing Spanish Style Smoked Chorizo, and the kind of craftsmanship that reminds you why quality ingredients matter.

Every element on a board should earn its place, not just visually, but in flavor and pairing.

Sometimes, research is delicious.

I had a lot of fun with this build.

It was a last-minute request, but I was up for the challenge and sometimes those are the boards that remind me why I enjoy doing this so much.

Fresh berries, creamy cheese, cured meats, sliced sourdough baguette, crackers, honey, fig spread, chocolate bark, herbs, and a whole lot of careful tucking, folding, slicing, and “please stay right there” food styling.

Because yes, I do talk to the ingredients a little.
