Baklava Cheesecake 😋💚

Preparation
Grease a springform pan (24–26 cm) with a little melted butter.

Base (Baklava)
• 8 sheets baklava pastry
• 150 g butter, melted
👉 Brush each sheet with butter and place them loosely crumpled into the pan.

Pistachio Layer (under the cheesecake)
• 150 g pistachios, ground
• 150 g walnuts, ground
• 30 g sugar
• 3 tbsp butter, melted
👉 Mix everything well.
👉 Spread evenly over the baklava base and press lightly.

Cheesecake Filling
• 1 kg quark (or quark mixed with some cream)
• 120 g sugar
• Vanilla extract
• 1 tbsp lemon juice
• 3 eggs
• 30 g flour
👉 Mix until smooth (do not overmix).
👉 Pour over the pistachio layer and smooth the top.

Top Layer
• 8 sheets baklava pastry
• Melted butter
👉 Brush with butter, loosely crumple and place on top.

Baking
• 180 °C / 350 °F (top & bottom heat)
• 40–50 minutes
👉 Top should be golden brown, center slightly wobbly.

Syrup
• 1 cup water
• 1 cup sugar
• 1 tbsp lemon juice
👉 Bring to a boil and simmer for 10 minutes.
👉 Let cool completely.

❄ Chill
Refrigerate the cheesecake for a few hours, preferably overnight.

🍯 To Serve
• Sprinkle with pistachios
• Drizzle with a little syrup
• Slice & enjoy 💚✨
