What a beautiful day for a cook! Today we’re cooking a couple of briskets a few baby back ribs some pork belly burnt ends and some smoked deviled eggs. Keep the smoker around 225°. I didn’t get to cook started until 1 o’clock so with the briskets at 14 and 17 pounds after trimming I don’t expect to be done until after two or 3 in the morning. I’m gonna hold them in the oven at 150° for delivery tomorrow afternoon.
