The past two weekends we did the Tacofest in St. Peters and in Granite City. At this festival they judge all the tacos spots and list the top 5. At St. Peters we came in 2nd with our Alambre (Steak, Bacon, and Chrizo) tacos. The following week I told Jose Sanchez that we were going to win this thing. The taco we went with as our best was our Brisket Street taco with a Maker's Mark bourbon glaze over the top. Needless to say we beat 15 other taco spots from around St. Louis, so I guess Dad can't be to mad at me for using his bottle of Bourbon.
I would like to say thank you to everyone over the past 4 years thar has bought food from us and pushed us to make better food.
To food truck family this post had to come a week late because I wanted to thank each and everyone of you for your hard work over the years, and by winning and coming in 2nd shows that we can keep up with the best of them.
To my family thanks for everything. Sometimes all the hard work does pay off. May be a rocky road at times, but we seem to make it too the finish line.
To Cuellar Adi, thanks amor for being there all the time and encouraging me to keep on keeping on. Your are still the only person I know that says, "I can't make it to your event to help, but I will help clean the truck."
To Jose Sanchez, thanks for teaching me how to cook at a high level and pushing the limits of what possible. I think it's safe to say you created a monster. Seems when we are together some great tacos are about to be made. Plus I can always say, "I told you that Brisket would win".
Lastly, the guys in the back. If you really want to test your skills work along side people that have been doing it forever. The guys in the back are always quick to teach a skill and make fun of you for doing something that doesn't work as efficient, but in the end your reward is some of the best tacos you ever ate.
