I almost never talk about my personal life. I think as a chef I should focus on my food. But the reason for everything I do, my love of food, my passion for sustainability, and love of nature and the outdoors has always been my mother. From when she first took me camping at 6 months old with her girls out troop, to making me go grab fresh herbs from her wild herb garden, and to her taking true pride in making people happy cooking for them.

She is my one true inspiration and my drive comes from wanting to make her proud. She has always believed in me and wanted nothing more than to see me happy( well maybe grandkids). Through my best and worst times she always saw the best in me and pushed me to the next thing, which only made me want to make her proud.

I am truly grateful she was able to see me on Food Network, hear me on NPR, and eat at my cafe.

And after all of that one of the best gifts she gave me was an amazing family and siblings. I don't know how people go through things like this without a strong family to support them.

My mom passed away on Saturday. Almost 5 years to the day from her first diagnosis.

Mom I love you and will forever work hard to make you proud. I'll keep cooking amazing food that makes people happy to make you proud.

Get some rest now mom, you don't have to worry about us, you raised us strong and we will always look after each other.

Love you always.

The Iterum Project is the social impact and r&d side of Iterum foods. We are partnering with and to explore the food that is wasted in our current food system, the possibility of locally source, and where our food system should be headed.

As part of this we currently are recovering food lost in our system and creating meals for those that have become food insecure during covid-19.

This is an sample dish that uses all local products, forged foods, or recovered food waste.

combined with bananas and dried potatoes for a incredibly delicious flat bread. Local braised greens. Garlic scapes salsa verde, vinegared vegatable salad, and local diver scallops.
