Our story began in the Spring of 2016 when my wife, Dana, talked me into competing in the Wolfpack BBQ Bowl at the Kay Yow Spring Football Game. I always thought I cooked good BBQ, or at least everyone said I did, so I said “why not”. We packed our 10x10 canopy and loaded up our little 5 foot grill and headed to Carter Finley Stadium. Boy, I had no idea what I was getting myself into. When we pulled up, I told Dana “what have you got me into”. We were definitely out of place! But she didn’t care. She was there to represent the Wolfpack, help support the Kay Yow Foundation, and help show that her husband’s BBQ was the best! Yeah, she was clueless, too! LOL! Needless to say, it was an experience and definitely one that was more than just cooking a hog in the back yard. But we came home with 6th place and two Taster’s Choice Awards, so we were thrilled with the results of our first competition and we were ready for the next one. I guess you could say we were hooked!
We competed 5 more times that year, but realized after our 3 competition that the little 5 foot grill wasn’t going to cut it with the big dogs. So, I managed to build my own and our first competition using it in September of 2016, I placed 2nd, which qualified me to compete at the State Championship. I was so thrilled to just be there. It was such an honor. Results were not what we hoped for, but we were thrilled to see my mentor, Chris Fineran bring home the win!
2017 was a little better. We stayed a consistent 5th most of the year until Snow Hill in September, when we brought home 3rd place. We tried something different in our technique and it was a game changer. We applied the same concept the following weekend at the State Championship and when I opened the lid of my grill the morning of judging, I couldn’t believe what I was seeing. I had a perfect pig! I knew it was good, but still not sure it was good enough to beat 27 other teams that were just as good, if not better than me. We ended winning the 2017 State Championship, tying for first in crispy skin, first place in the blind taste, and 8th in the sauce competition. It was absolutely unreal. I couldn’t believe what I was hearing. To this day, it’s still hard to believe. It was amazing!
