🧁 Cranberry, Orange & Pecan Muffins 🧁
Ingredients:
For the Muffins:
• 2 cups all-purpose flour
• 1 teaspoon baking powder
• 1/2 teaspoon baking soda
• 1/2 teaspoon salt
• 1/2 cup unsalted butter, softened
• 1 cup granulated sugar
• 2 large eggs
• 1/2 cup orange juice (freshly squeezed preferred)
• Zest of 1 orange
• 1/2 cup buttermilk
• 1 cup fresh or dried cranberries
• 1/2 cup chopped pecans
For the Glaze (Optional):
• 1 cup powdered sugar
• 2 tablespoons orange juice
• 1 teaspoon orange zest

Instructions:
1️⃣ Prepare the Muffin Batter:
1 Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease with non-stick spray.
2 In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
3 In a large bowl, beat the butter and sugar together until light and fluffy.
4 Add the eggs one at a time, beating well after each addition. Stir in the orange juice and zest.
5 Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix until just combined.
6 Gently fold in the cranberries and chopped pecans.
2️⃣ Bake the Muffins:
1 Divide the batter evenly among the muffin cups, filling each about 2/3 full.
2 Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
3 Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
3️⃣ Add the Glaze (Optional):
1 In a small bowl, whisk together the powdered sugar, orange juice, and zest until smooth.
2 Drizzle the glaze over the cooled muffins.

Cook Time: 20 minutes
Total Time: 35 minutes
Servings: 12 muffins
