Making Better Choices starts with making a better choice!

Vegetable Lentil Bolognese
- 1 tbsp oil- 1 medium onion finely diced- 1medium stalk celery finely diced
- 1 1/2 cups fresh mushrooms finely diced
- 2 medium carrots finely grated
- 4 cloves garlic finely minced
- 2 tsp Italian seasoning
- 1 tsp onion powder
- Pinch of red pepper flakes
- Salt and black pepper to taste
- 3 cups Romesco, marinara, or tomato sauce
- 2 cups vegetable broth
- 1 cup dry lentils
- 1 tbs low sodium soy sauce
- ½ cup plant-based milk
- Pasta of Choice

I’ve cooked Tuscan Chicken on numerous occasions. It has been one of our client’s, and our’s, all time favorites. So I didn’t hesitate to drop this recipe and feed your feed.

Instead of the usual heavy cream, I substituted Coconut Milk, to cut back on our dairy intake. Served up with some garlic toasted sourdough, this dish was filling, comforting, simple and oh so delicious…Absolutely “Ahhh-mazing!”

Tuscan White Beans
2 Tbs Butter
1- tsp Granulated Garlic
1 tsp - Italian Seasoning
1/4 tsp - Salt
1 Tbs - Tomato Bouillon
1/4 tsp- Red Pepper Flakes
2 Tbs Minced Garlic
2 Cups Vegetable Broth
2 Cans of White Beans (Drained)
1/2 Cup Sun-dried Tomatoes
1 Can Coconut Milk
1 Bunch of Fresh Kale (4 Cups-ish)
Parmesan Cheese

- In a pan, on medium heat. melt butter and stir in spices.
- Add in garlic and stir for a minute, so it doesn’t burn.
- Add in vegetable broth. Stir and let it come to a boil.
- Add sun-dried tomatoes. Lower the heat and let simmer a few minutes.
- Stir in your beans.
- When it starts to thicken, add in coconut milk and bring to a simmer.
- Stir in chopped kale. Cook until the kale begins to wilt.
- Adjust seasoning as necessary. Enjoy warm with a piece of crusty, toasted bread. Serve with shaved parm.

Who doesn’t love a good dip?Whether watching a movie, or working through the afternoon, snacking adds fuel to your fire.

Pair this with your favorite chips, pretzels or cut veggies for a little pick-me-up.

Want a healthier version? Substitute the mayo, sour cream and cream cheese for a plant bases version…Just watch the sodium and sugar counts!

Caramelized Onion Dip
Ingredients:
1/8 cup avocado oil or olive oil
2- Sliced Onions
1 tsp - Kosher Salt
1/2 tsp - Black Pepper
1/4 tsp.- Cayenne
1 1/2tsp. - Worsteshire Sauce
1 pkg (4oz) Cream Cheese )Room Temp)
3/4 C- Sour Cream
1/3 Cup- Mayo

Sauté onions in the oil until it begins to brown. Add in the seasonings and worsteshire sauce. Mix thoroughly. Once caramelized, remove from the heat and cool complete.

With a mixer, thoroughly blend the cream cheese, sour cream and mayo. Mix in the onions. Refrigerate at least one hour.
