We’re so excited to finally share this menu with you for our first Lunch Lab of 2026! We’ve heard from a lot of you, so we think you’ll be as excited about this month’s flavors as we are. Here’s a few highlights we’re really looking forward to:
First, we’ve got a brand new ‘Braciole’ sandwich inspired by the great Italian comfort dish. This saucy sando gets loaded with tomato-braised local beef, an herby lemon-miso gremolata, and a generous dusting of toasted parmesan breadcrumbs on our pillowy sesame seed focaccia.
Next, we’ve got the return of our Lemon-Tahini Chicken, but this time we’re doubling down on the Mediterranean flavors with the addition of feta cheese and a cucumber & pickled onion salad.
Finally, since it’s been one whole year since the start of Lunch Lab, we’re celebrating our birthday with some incredible Brownie Batter Confetti Cookies. These double-chocolate sweet treats get coated in colorful rainbow sprinkles before hitting the oven for some cosmic nostalgia! This is in addition to those Chocolate Chunk & GF/Vegan Chai Molasses Cookies, so don’t you worry; those aren’t going anywhere soon.
