We've been busy behind the scenes working on new partnerships, events, and opportunities to bring Ocean Desert to more people throughout Albuquerque.
Creating new rituals, recipes and expanding the menu for the summer, while cooking up more content than necessary.

If you haven't heard, The Mushroom tacos are 🔥.
We can't thank enough for the always beautiful and tasty mushrooms.
They are an off menu (at the moment) hit🎯.

We've also worked out a very simple and straightforward approach to how we plan our taco bars. All the same love care and consistency you would expect, From Sea To Soul.

Behind the Mask: Pt. 3

The room changed the moment the clock started.
No more studying. No more planning.
Just movement.

Pans heating. Knives moving. Timers counting down.
Every station, finding its rhythm. Every chef locking in.
Some chefs worked quietly. Some called out every move. Some stared at the plate in front of them, already seeing something no one else could see yet.
Ninety minutes sounds like a long time until you're standing in it.

A sauce breaks. A garnish falls. And suddenly A new idea is necessary halfway through the cook In order to correct the mistake.
Every decision costs time.

This is where preparation becomes instinct.
Not the recipes. Not the techniques.
The ability to stay calm when the plan changes.
Because it always changes.
The ingredients never arrive exactly as you imagined.
The clock always moves faster than you want it to.
What matters is what happens next.

The adjustment. The recovery. The willingness to trust yourself when there's no one left to ask.
This is the part hidden behind every finished plate.
Not perfection.
Adaptation.

Baja Fish tacos
Crispy tempura dipped fish, chunky pico, creamy slaw, signature drizzle of Baja sauce.

#2 is the up and coming,
Baja shrimp taco
Buttery garlic seasoned shrimp with the Baja set up.

#3 The OD Kraken fries, our take on "Animal Fries"
Grilled onions, green Chile, namesake sauce, queso fresco.

#4 is the always delicious,
Queso Adavada tacos
Slow braised marinated pork in red Chile, built like a street taco. Cilantro, fresh diced white onion, melted cheddar jack and queso fresco.

Octopus confit on a bed of red cabbage green onion and cilantro, now comes dual welding sauces: Baja and our new house Sriracha sauce.
