Superfoods salads!! The salad really packs a punch with at least 10 varieties of lettuces topped with beets, sweet potatoes, red cabbage, edamame, carrots, cucumbers, tomatoes, quinoa and broccoli sprouts!! I served it with a Tahini Goddess dressing! 🥗🍅🥒🥕🫜🍠

My Veggie Coconut Curry is packed with flavor and nutrients, and smells so good! I used cauliflower, sweet potatoes, carrots, green beans, tomatoes, garbanzo beans, peppers, onions, and garlic simmered in coconut milk with Indian herbs and spices. So delicious!! 🥥🫑🍠🍅🧄🧅🫚

I'm roasting butternut squash for bisque, part of my Client menu this week! It's pretty easy- cut in half, scoop the seeds, brush with a little olive oil and dust with salt and pepper. Flip them over on parchment paper and roast for about 45 minutes at 425°.

I take it a step further and dry the seeds and then pan toast them. They are delicious as a crunchy snack, on salads, or as a garnish on top of the bisque!

Homemade pasta and meatballs in a tomato cashew cream sauce! 🍝

Having an Italian grandma, I grew up with her homemade pasta every Christmas. I've been trying to keep her traditional alive, from Christmas Day ravioli to some post-Christmas homemade fettuccine for my clients!

It's not as hard to make as you think, especially when you have a KitchenAid mixer . Fresh pasta is the best, so worth the effort, and it cooks in three minutes!! I also love getting texts from clients telling me how much they enjoyed their food!!!🌱❤️🙌🏻

An antipasto salad is a hearty Italian-inspired chopped salad that takes the components of a traditional antipasto platter into a single dish!

This vegan version served individually features garbanzo beans, pickled vegetables, and olives on a bed of greens, all tossed in a zesty Italian dressing.

This black-eyed pea caviar is the perfect New Year's snack! Eating black-eyed peas on New Year's Day is a Southern tradition symbolizing good luck, prosperity, and resilience. It honors African American history and culture, to whom we owe homage for so many of our delicious recipe origins.

To make this quick caviar (which can also be eaten as a salad) I tossed steamed black-eyed peas with diced red and green bell pepper, red onion, corn, and a simple homemade Italian dressing.
