This vegan tofu poke salad is one of my favorite salads! It's simple and healthy! It's made using colorful, whole food, nutrient-dense plant ingredients. It's also gluten-free, oil-free, refined sugar-free, salt-free and dairy-free! 🥗

Ingredients: Chopped Romain lettuce, carrots, celery, radishes, edamame, corn, marinated tofu, and tomatoes. I would have added cucumbers if I had one, lol! I served it with a homemade creamy almond-based sesame dressing, and sprinkled everything but the bagel seasoning on the tofu!

Creole Stuffed Peppers 🫑

What makes them Creole? A foundational element of Creole cooking is the "holy trinity" - a blend of onions, celery, and green bell peppers – which provides a fragrant and savory base for sauces and dishes.

I started these stuffed peppers with sautéed onions, celery, and bell peppers, and then simmered them with tomatoes and Creole herbs and spices like thyme, basil, oregano, paprika and garlic. After simmering a bit, I folded in black beans and the rice, stuffed the peppers, and baked! 🫑

This Roasted Cauliflower Soup is creamy, velvety, and luxurious! All the layers of flavors, with no guilt...or cream!

Oven roasted cauliflower was added to a pot of sautéed onions, garlic, and potatoes. I simmered all of in vegetable broth with fresh herbs and then blended to perfection in my along with raw organic cashews, a hint of lemon and a pinch of nutmeg! Deeelish!!👩‍🍳🌱

Oven-baked potato pancakes 🥔

I found myself with a few too many potatoes needing to be used, so I made potato pancakes. I shredded the potatoes, along with a carrot, zucchini, and an onion, and mixed them with fresh parsley and chives, homemade oat flour, powdered egg replacer, onion powder, garlic powder, salt and pepper. I pattied them and baked them at 425° for about 18 minutes per side.

I kept them lighter and healthier by oven baking versus pan frying. They were made oil free!

Kale salad with red onion, celery, pecans, cranberries, and tempeh bacon. 🥬

I was thinking about this salad combination all day! I put it together for dinner and it was 10/10🔥

To make a simple dressing, I used a small amount of vegan mayo, Dijon mustard, apple cider vinegar, and a hint of agave. Simple and lightly dressed. 👩‍🍳

Lemon couscous salad 🍋

I used the remainder of ingredients from client meal preparation and made this simple couscous salad. I added diced red onion, cucumber, celery and pears to the couscous, tossed in some lentils, and finished it with a squeeze of lemon juice, green onions, fresh parsley and salt and pepper. 🌿

Elegant, simple, delicious.

Lentil and zucchini stuffed peppers with quinoa and rice were the JPF Entree of the Week. These colorful bell peppers are bursting with Italian flavors - tomato, onion, garlic, basil, oregano, fennel - and just a hint of heat from red pepper flakes! 🫑🌶️🧅🧄
