Daisies are often seen as symbols of innocence, childlike wonder, and the gentle beauty found in simplicity. Their white petals look like angel wings, reminding us of the ethereal realms beyond our earthly existence.

The name “daisy” comes from the Old English words “daes eage,” meaning “day’s eye.” This is because the flower opens in the morning to greet the sun and closes at night. This daily ritual reflects the cycle of life, reminding us to appreciate the fleeting moments that shape our existence. The daisy teaches us that even in times of chaos and uncertainty, there is still beauty to be found.

They are also associated with purity of the soul and new beginnings, embodying qualities such as faith, love, and divine beauty.

Poppyseed Slice

🔸For the dough:
400g flour
200g margarine
150g powdered sugar
½ packet baking powder
2 tbsp vegan sour cream
2000g poppy seeds

🔸For the cream:
4 tablespoons flour
400ml milk
250g margarine
250g powdered sugar
200g sour cherry
2 tbsp rum

🔸Crush the flour with the margarine, add the powdered sugar, baking powder, a little salt, ground poppy seeds, and knead with sour cream.

🔸Roll out into 3 sheets and bake on the back of a buttered baking sheet.

🔸In the meantime, prepare the cream: boil the milk with the flour and a little salt until thick. Mix the powdered sugar with the margarine, add the sour cherry and in rum. Mix with the cooled milk mass.

🔸Fill the 3 sheets with the cream, sprinkle the top with powdered sugar, and cut into slices, as desired.

Cherry Tomato, Olives and Capers Spaghetti - for 4 people

500g vegan spaghetti
2tbsp salt

🔸Begin heating a large pot of water for the pasta. When the water is boiling, add a generous amount of salt and spaghetti. Cook until al dente. Reserve some pasta water for the sauce around 1 ladle.

Sauce - in the meantime make the sauce
1 tbsp extra-virgin olive oil
400ml diced tomatoes
2 cloves garlic - crushed
90g Kalamata olives - halved
50g small whole capers
1 tsp kosher salt
Freshly cracked black pepper
Fresh basil

🔸In a large skillet over medium-high, heat oil add diced tomatoes, fresh basil, salt, pepper and garlic, cook this around 15 min with occasionally stirring. Then add olives and capers mix under heat for 3-5 min. Let sit on the side until everything is ready.
When the pasta is ready add the pasta water.

Toppings
1 tbsp extra-virgin olive oil
10-15 cherry tomatoes - halved
3 cloves garlic - chopped
90g Kalamata olives
50g small whole capers
1 tsp kosher salt
Freshly cracked black pepper
Fresh basil

🔸In a large skillet over medium-high, heat oil and add garlic, whole olives and capers mix under heat for 3-5 min then add cherry tomatoes and a pinch of kosher salt and fresh basil, cook for 5 min. Let sit on the side until everything is ready.

🔸When everything is ready add the pasta to the sauce and after serving on a plate add the topping and some fresh basil. Ready to eat!

Quince Good Morning Drink
1 banana
1 tbsp cane sugar
150g quince compote
1 tsp cinnamon
1 juice of lemon
100 ml water
200ml coconut milk or of your choice of plant based milk
You can sprinkle with some extra coconut cream for more creaminess.

🔸Quince compote
5 large quinces
2 lemons
10 tablespoons cane sugar
a piece of cinnamon, or cloves

Clean the outside of the quinces with a brush and water. After cutting them in four, remove the seeds.
Cut them into pieces of your choice and pour enough water over them to cover the fruits. Add the sugar, lemon juice and the washed, chopped peel of the lemon. Cook the quinces until soft, about 3/4 hour. Ready to serve as a compote.

🔸Quince Cheese

But if you take out the compote pieces, blend them and cook them further with sugar, you can also make quince cheese from them. Once the mixture has reached a thick consistency, pour the mixture into molds and cool it in them. After it has set, squeeze it out of the molds. And dry it by turning it daily. This is important because it molds easily.

Famous Hungarian Lángos

400g of bread or fine flour
30g of yeast
2 boiled potatoes
1 tbsp of oil
½ dkg of salt
lukewarm non-dairy milk
oil for frying

Topping
Vegan sour cream
Vegan grated cheese
Fresh garlic
Salt to taste

🔸The yeast is made to rise in 1 dl of lukewarm milk, with a pinch of sugar.

🔸Make a well in the middle of the flour, pour in the risen yeast, add the boiled, mashed potatoes, a spoonful of oil, and knead a softer dough with lukewarm, salted milk. Beat well. Sprinkle the top with flour, cover with a cloth and let rise for approx. 1 hour.

🔸When the dough has risen well and doubled in size, heat the oil in a pancake pan. The dough is rolled out into palm-sized pieces, placed in hot oil, and first covered, then, when turned over, fried without a lid until crispy.

🔸Lángos is quick to make, and rises quickly in small quantities.

🔸It can be served in several different ways. My favourite is with sour cream, cheese and fresh thinly sliced garlic.

Lentil soup

1 medium onion
250g lentils (soaked the night before)
half a can of canned chopped tomatoes in juice
5 bay leaves
2 tbsp vegeta
2 tbsp paprika powder
1 l water
2tbsp flour
1 dl sunflower oil
vegan sour cream

🔸Fry the diced onion in the half of the oil. Then I add the lentils that I soaked the night before and washed well, as well as the bay leaves. I pour water on and cook until soft around 10 minutes.

🔸In the meantime, I make a thickener, heat the other half of the oil and add the flour, fry it a little, then remove from the heat, add paprika powder and pour in cold water.

🔸Add the previously made thickener to the lentils, pour in more water to make it soupy, if necessary.

🔸Add the canned tomatoes. After tasting, I season with vegeta or salt. I cook the soup for another 10 minutes to let the flavours meld well.

🔸Serve it with vegan sour cream. Ready to eat.

Baked potatoes - for 2 people

- This recipe was out of this world 😋❤️

2 leeks
9 medium-sized potatoes
100g Ráma margarine
200g vegan cheese
200g coconut cream
150g vegan cream
salt, ground pepper
vegeta and red pepper powder

🔸After peeling and washing the potatoes, cut them into thin slices, sprinkle with vegeta and divide into three parts.

🔸Mix the sour cream with the vegan cream, then salt it to taste.

🔸Grate the cheese on a large grater. Set aside a good handful of grated cheese, which will be added to the top at the very end, when toasting.

🔸Cut the leek into rings.

🔸Grease a small baking sheet with margarine, then layer the ingredients. Potato rings on the bottom, leeks, margarine pieces, grated cheese, sprinkled with pepper and paprika, then half of the sour cream is spread evenly, repeat the previous action and finish it with the last layer of potatoes. Then put aluminium foil on top and bake in a preheated oven at 200 degrees for 1 hour.

🔸Then remove the foil, sprinkle with grated cheese, and put it back in the oven, raising the temperature for about 10 minutes, so that the top browns.

🔸You can also put freshly ground pepper on top.
Serve with mixed fresh salad. Ready to eat!

Homemade Pizza - 6 small thin pizza

❗️You need to rest the dough for 2 hrs, it sounds a lot at first, but in this time you can do whatever you wish too

600g all purpose flour, some extra for dusting
11/2 tsp active dry yeast
1 1/2 tsp salt
530ml COLD water
1 tsp extra virgin olive oil
Semolina flour

Toppings
Arrabbiata sauce
Vegan mozzarella
Cocktail tomatoes - cut in half
Rucola
Balsamic vinegar
Your choice of other toppings, I like capers so one of the pizza is topped with it.

🔸In a large bowl, mix flour, salt and dry yeast together. When is mixed well add the cold water and stir it with a wooden spoon until is combined after sprinkle some flour on a kitchen counter and place the dough. Using your hand start kneading the dough for 10-15 minutes. The time is necessary don’t give up. It is possible that you need to add more water, if it is dry or more flour, if it is sticky.

🔸When the dough is ready, cut it into 6 pieces and form them into rounds. Place them on lightly oiled tray and drizzle with 1 tsp olive oil each, cover with plastic wrap and let the it sit at room temperature and rise let rise for 2 hours in a draft free area, lightly warm place.

🔸Dust your kitchen board with semolina four place your pizza dough on it, make sure it is slides easily when moved, when is the right shape place on a baking tray with backing paper on it. Pour 2-3 tablespoon of Arrabbiata sauce in the centre and spread it around with the back of your spoon, make sure leaving 1- 2 cm of space at the edges.

🔸Sprinkle with mozzarella and then add your favourite toppings. Don’t add to much topping, as it is a thin crust.

🔸Preheat your oven on the highest 205 degree for 30 min, before backing it, bake your pizza for 10-15minutes, until is golden brown on the edges.

🔸When is ready, remove from the oven and decorate it with rucola and drizzle it with balsamic vinegar. Ready to eat!
