I dont get fancy, i just boil them down with water and sugar. Next I strain them to remove the pits and skin.Keep everything else
Then i make a paste with custard powder and water to thicken it.
I keep this in the fridge once cooled and add it to my cereals and deserts
I also add spices to make it a spicy plum sauce - sooooo delicious with pork and chicken.
Shelf life isn't long so its best frozen in portions and defrosted as needed.
This can also be done with apricot fam.

Give this easy Pav roll a go this Christmas 🎄 its fool proof

Delish Pavalova roll

4 egg whites
1 cup castor sugar
1tsp white vinegar
1tsp vanilla essence
1 TBSP cornflour

Preheat oven to 180 degrees Celsius

Beat egg whites until they form soft peaks

Add castor sugar slowly - 1 TBSP at a time - until glossy white and you have stiff peaks.

Fold in vinegar, vanilla and sifted cornflour until just combined.

Spread evenly onto greased and lined tray

Bake for 10mins

When done, turn out onto a lightly icing sugar dusted sheet of baking paper and allow to cool completely.

Once cool, spread with whipped cream and fruit of your choice and roll.

Carefully transfer onto serving tray and allow to chill in fridge before slicing.

Mmm enjoy!

Easy as corn fritters

1/2 cup plain flour
1tsp baking powder
1can cream corn
2 eggs lightly beaten
Sprinkle salt and pepper to taste
Oil for frying

Sift flour and baking powder
Add salt, pepper, corn and eggs
Mix well
Heat oil in frying pan on medium heat
Fry both sides of fritters until centre is cooked through
Enjoy

Feeling like some comfort food? Try this easy recipe 😋

Simple Apple shortcake

250g soft butter
1 1/2 cups icing sugar
2 eggs lightly beaten
3 cups self raising flour
1 tsp vanilla essence
4 apples or 1 large can

Preheat oven to 150 degrees Celsius
*see foot note for prepping apples if using raw apple*
Cream butter and sugar
Add eggs flour and vanilla
Mix well
Divide in 2
Press half into tin
Poke holes and par bake about 15mins until starting to firm
Layer over strained apples
Press other half of dough on top evenly
Poke holes in top
Bake for approx 30mins until golden
Dust with icing sugar once cooled
For a firmer shortcake allow to set in the fridge

*prep apples
Peel, core and cut apples to desired size
Stew in saucepan until tender on moderate to low heat- no need to add water as apples will release juices
Allow to cool and strain out any excess juice
Can add sugar and/or cinnamon to taste if desired
