📍 Kōtuku Collective Update 📍

We're now well and truly settled into our permanent home at Tasman Holiday Parks Miranda! ☕🍔🌊

As a result, The Roaming Heron trailer will now be hitting the road only for external catering, weddings, private functions, community events, and larger bookings.

We have just ONE Calf Club Day and ONE Thames sports event remaining on our calendar. After that, we're officially fully booked for 2026! Unfortunately school spots were advertised as "fast or ya' last" 🙌☕️

A huge thank you to everyone who has supported us, booked us, recommended us, and followed our journey. What started as a dream on wheels has become something pretty special.

Wednesday you'll find us at the Mangatarata Cross Country event, serving up coffee, food, and all the goodies to keep competitors and supporters fuelled throughout the day! ☕🍟🏃‍♂️

A friendly reminder that we're operating from a generator, which means we can't run the coffee machine, hotplate, and deep fryer all at the same time. Please bare with us while we navigate the changeover between coffee service and food service throughout the day.

Your patience is always appreciated, and we'll do our best to keep things moving as smoothly as possible. 💛

A huge thank you to all the holiday park guests, locals, and supporters who came down last night. The turnout was far beyond what I expected, and I'm incredibly grateful for every single person who stopped by.

With such a busy service, we've had to downsize and improvise parts of tonight's menu while we restock. I apologise if there was something you were hoping to grab that isn't available tonight.

Full menu is up and running for the long weekend! 🙌

This will be our main menu right through until Sunday evening!!! as well as Monday morning for all the checkout coffees ☕️

As always, depending on the busyness of the weekend and supplier availability, we may need to improvise slightly here and there, but we’ll do our best to keep the menu flowing all weekend long. 🍔☕️🌿🫘

If I’ve got remaining stock sunday/Monday morning, I’ll also be doing hot grab-and-go breakfast options with no pre-orders needed for guests and anyone passing through before heading home!

🥪 Toasted paninis 🍔 Breakfast burgers 🍓 Loaded French toast!

☕️🌿🍔Notes from the CART!

Please understand that just because I own my own business does not mean I’m well off or rich.

The order I’ve just sent through to Bidfood for delivery tomorrow to kick off King’s Birthday weekend came to $790 + GST!!! and that doesn’t even include fresh produce for the weekend nor the cost of our very precious coffee beeeans! 🫘

That figure also excludes:
• travel costs
• packaging
• topping up consumables
• gas, cleaning products etc.
Or even site fees for vendors

To simply make that one order back, I would need to sell roughly 50 burgers at $18 each over the long weekend.

Sounds easy over four days, right?

But hospitality doesn’t work like guaranteed income. As a small vendor, we run the risk of only serving 30 burgers across those same four days depending on weather, park traffic, events, and how many people are travelling.

So next time you see pricing from a small local business, just remember you’re not only paying for the burger! you’re paying for the prep, stock risk, equipment, travel, power, packaging, wages, and the gamble we take every single weekend hoping people show up.

March 2027 is officially FULLY BOOKED for weddings 🥀🌷🌹🌸💍👰🤵

Firstly, thank you SO much for the support and trust in Kōtuku Collective for your special days — it honestly means the world. 🌿😍

We do have ONE remaining weekend available in February 2027 for weddings or large catering events before we head into a very full season.

If you are looking at booking catering through January 2027, please note there will be a peak season surcharge applied. January is our busiest time of year at our main location based at Tasman Holiday Park – Miranda, which is our primary source of income over summer.

If you’re planning ahead for 2027, now is definitely the time to lock dates in 🔑🔒

Kōtuku Collective is located BEFORE the actual entrance gates to the park, so locals, passers-by, tradies, travellers and anyone else are more than welcome to stop in and treat it as your own little hidden takeaway bar, on that note - Platter boxes, cheesecakes and breakfast can also be ordered and picked up from the trailer 🙌🍔🌭☕️

Some nights are definitely busier than others, so if you’d like to secure dinner or avoid missing out, feel free to flick us a message via the business page with your order 🍻🥂

Over the next couple of weeks I’ll be posting updated hours and availability for the park as things progress.

Unfortunately due to my son’s ongoing medical issues, we may be dealing with post-op care if he ends up having a much-needed surgery. Alongside this, we’re also navigating school transitions and learning support, which has become quite a long process.😮‍💨

I do apologise in advance for any short notice changes or unavailable dates. Thank you all for being patient and understanding while I juggle the mum life and business life! 🙌
