Baking tips:

1. Measure Ingredients Accurately: Use a digital scale (emphasis on digital not kitchen scale) for dry ingredients and measuring cups for liquids to ensure accuracy.

2. Room Temperature Ingredients: Butter, eggs, and other ingredients should be at room temperature.

3. Preheat Your Oven: Always preheat your oven before baking. This allows for even baking.

4. Don’t Over mix Batter: Over mixing can lead to dense cakes especially after flour has been added. Mix just until the ingredients are combined.

5. Use Quality Ingredients: Fresh, high-quality ingredients, like eggs, flour, baking powder, and cocoa, can make a big difference in flavor and texture.

6. Use Parchment Paper: Line your baking pans with parchment paper to prevent sticking and drying up of the down and sides.

7. Chill Dough: For pastries, chilling the dough before baking relaxes the gluten, and gives you a flaky and crispy pie.

8. Don’t Open the Oven: Avoid opening the oven door too often while baking as it can make cakes deflate.

9. Sift Dry Ingredients: Sifting flour, cocoa powder, and baking soda helps remove lumps and distribute ingredients evenly.
