Red Velvet Cupcakes
Ingredients (makes about 12β14 cupcakes)
Dry ingredients
1ΒΌ cups all-purpose flour
1 cup sugar
1 tbsp cocoa powder
1 tsp baking powder
Β½ tsp baking soda
ΒΌ tsp salt
Wet ingredients
1 large egg
Β½ cup vegetable oil
Β½ cup buttermilk
(or Β½ cup milk + 1 tsp vinegar, rest 5 minutes)
1 tbsp red food coloring (gel preferred)
1 tsp vanilla extract
Β½ tsp white vinegar
Instructions
Preheat oven to 170Β°C / 340Β°F.
Line a cupcake pan with paper liners.
In a bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.
In another bowl, whisk egg, oil, buttermilk, food coloring, vanilla, and vinegar.
Combine wet and dry ingredients gently until smooth.
Fill cupcake liners ΒΎ full.
Bake for 18β22 minutes or until a toothpick comes out clean.
Cool completely before frosting.
Cream Cheese Frosting
Ingredients
250 g cream cheese (cold)
Β½ cup unsalted butter (softened)
2β2Β½ cups powdered sugar (sifted)
1 tsp vanilla extract
Instructions
Beat butter until light and fluffy.
Add cream cheese and beat until smooth.
Gradually add powdered sugar and vanilla.
Beat until creamy and spreadable.
Chill frosting slightly before piping.
