Hydration is a key factor in bread-making, and if you've ever wondered what it means and why it’s important, you're not alone.

Let’s break it down in a simple way.

•••

What Is Dough Hydration?

Dough hydration refers to the percentage of water in a dough relative to the amount of flour, calculated by weight (not volume).

The formula is:

(Water weight Ă· Flour weight) Ă— 100 = Hydration percentage

For example:

500g flour + 250g water → 50% hydration
500g flour + 340g water → 68% hydration
500g flour + 400g water → 80% hydration

Measuring by weight ensures accuracy, as cup measurements can vary based on how flour is packed.

•••

Why Does Hydration Matter?

Hydration affects everything from dough texture to handling and final crumb structure:

Low hydration (50%-60%) → Firm, easy to handle, holds shape well. Suitable for sandwich bread, bagels, or pizza dough.

Medium hydration (65%-75%) → More extensible, softer crumb. Used for classic artisan bread, dinner rolls, or soft loaves.

High hydration (80%-100%) → Sticky, requires stretch & fold techniques. Produces open, airy crumbs like ciabatta or focaccia.

As hydration increases, dough becomes softer, spreads more, and needs different handling techniques.

•••

Does Hydration Apply Only to Sourdough?

No, hydration is a general term in bread-making, not just for sourdough! It applies to all yeast-leavened bread, from sandwich loaves to rustic, artisan-style breads.

However, sourdough bakers often discuss hydration more because it influences fermentation, gluten development, and the final texture of the bread.

•••

Here's what to take from this post.

Understanding hydration helps you control dough consistency, troubleshoot issues, and improve your baking skills.

Next time you want a firmer or softer dough, simply adjust the hydration level accordingly.

End of post.

As usual, I hope this helps.

When we think of sugar in baking, the first thing that comes to mind is sweetness.

But sugar does much more than that! It affects texture, moisture, color, and even how baked goods rise and spread.

That’s why adjusting the sugar in a recipe, whether increasing or decreasing, can completely change the final result.

Let’s break down sugar’s role in baking and why it’s not just about sweetness.

•••

In baking, sugar usually comes in three main forms:

• Granulated sugar (white sugar)

• Brown sugar (light or dark, with added molasses)

• Powdered sugar (also called icing or confectioners’ sugar)

These are all refined sugars, derived from sugar cane or sugar beets.

But sugar also exists in other forms, like fructose (found in fruits) and lactose (found in milk).

At its core, sugar is simply a carbohydrate. But in baking, it’s far from simple.

•••

The Functions of Sugar in Baking

Sugar does more than make baked goods taste sweet. It plays a crucial role in texture, structure, and even shelf life.

Here’s what it does:

âś” Moisture & Tenderness:

Sugar binds with water, keeping baked goods moist and soft. That’s why low-sugar cakes can turn out dry.

âś” Leavening Aid:

When creamed with butter, sugar helps trap air, giving cakes and cookies a light, fluffy texture.

âś” Caramelization & Browning:

Sugar contributes to golden crusts and rich flavors through caramelization and the Maillard reaction.

âś” Texture in Frozen Desserts:

In ice creams and frozen treats, sugar helps prevent iciness and keeps the texture smooth.

âś” Preservative Properties:

Sugar can help extend shelf life by reducing moisture loss and inhibiting microbial growth.

Altering the sugar in a recipe can affect any or all of these factors.

Let’s see how.

What Happens When You Reduce Sugar in Cookies?

Reducing sugar in a cookie recipe doesn’t just make it less sweet, it changes everything. A test was conducted on a sugar cookie recipe, cutting the sugar by 50%, and here’s what happened:

05/04/2025

Most cake recipes don’t specify the exact pan size to use, and that’s because recipe developers don’t want to limit bakers, allowing them to use whatever they have on hand.

But here’s the thing: your choice of pan can significantly impact the final result.

If you choose to use a deep pan (typically 4 inches or more in depth), it's great for tall, impressive cakes, but it comes with a challenge.

The center takes much longer to cook than the edges, often leading to an overbaked exterior while the inside remains undercooked.

In this case, the key here isn’t to rush the baking process but to focus on even heat distribution.

When using a deep pan, lowering the oven temperature by about 25°F (14°C) and extending the baking time is recommended because it helps the heat reach the center more gradually.

Other than lowering the temperature and extending baking time, you can also use a heating core or flower nail, which is placed in the middle of the pan before pouring in the batter.

This can also help, as it conducts heat to the center for more even baking.

Also, you can wrap the pan with cake strips or tent the top with foil if it browns too quickly; this can further improve results.

And if you’re baking an especially large cake, consider splitting the batter into two shallower pans instead; it speeds up baking and ensures a more even texture.

•••

On the other hand, shallow pans (around 2 inches deep) offer a more predictable baking experience.

Heat is distributed more evenly, reducing the risk of burnt edges or an undercooked center.

They’re ideal for recipes where a shorter baking time is preferred.

So how do you choose the right pan?

If you want a tall, single-layer cake, a deep pan works, but you’ll need to adjust for even baking.

If you’re after a quicker, more consistent bake, a shallow pan is the way to go.

If you’ve ever had issues like burnt edges, a raw center, excessive doming, or a dry cake, your pan choice might be part of the problem.
