She ordered her daughter's birthday cake from us. Then she ordered her own. Then her sister ordered. Here is that story.

It started with a birthday cake for a five-year-old.

The mother had seen our page, checked our previous work, and decided to give us a try.

When the cake arrived , the little girl ran to it before anyone could stop her.

Her mother laughed and sent us a voice note.

She said: "She touched it before the candles were even lit. I think that means it was beautiful."

Why your cake looked amazing at the bakery but arrived slightly different. An honest explanation from a baker.

I want to talk about something that most bakers will not say publicly.

Cakes change between the bakery and the event.

And when that happens , customers are sometimes confused or disappointed. They wonder what went wrong.

So let me explain what can happen , and how to prevent most of it.

TEMPERATURE
A decorated cake is designed to be kept cool. In Lagos heat, fondant can develop a slight sweat when it moves from an air-conditioned space into heat. Buttercream can soften slightly. This is physics, not poor quality.

The fix: Collect or receive delivery as close to your event time as possible. Keep the cake in the coolest available space until it is needed.

TRANSPORT
Cakes are delicate structures. A pothole hit at the wrong moment, a driver who corners too fast, a cake placed at an angle , all of these can shift the internal structure or the decoration.

The fix: Always transport a cake flat, on a stable surface, in an air-conditioned vehicle if possible. Never in a car boot on a hot day.

HANDLING
A cake that is touched, moved, or repositioned multiple times before display will show it.

The fix: Place the cake once and leave it. Every unnecessary move is a risk.

I tell every customer this before delivery.

Not to make excuses.

But because knowing this in advance is the difference between a smooth event and an unnecessary disappointment.

Describe your personality using only a cake flavour. I will go first.

I will go first.

I am red velvet.

On the outside , smooth, put together, looks like I have it all figured out.

On the inside , a little tangy, a little complex, not quite what you expected when you first look at me.

And the best part of me only comes out when paired with the right people , just like red velvet only truly works with cream cheese frosting.

Five cake facts that will make you look at your next slice completely differently.

I have been baking for years and some of these facts still surprise me when I think about them.

FACT 1 — Temperature affects everything.

The difference between a dry cake and a moist one is often just 10 minutes of overbaking.

Professional bakers use thermometers , not timers alone , because every oven behaves slightly differently.

FACT 2 — Butter temperature matters more than most people realise.

Room temperature butter creams differently than cold butter.

Room temperature butter holds more air when beaten , which is what makes a cake light and fluffy instead of dense.

This is one of the most common home baking mistakes.

FACT 3 — Red velvet is not a chocolate cake
It is a common assumption.

But true red velvet has a distinct flavour that comes from the reaction between natural cocoa powder and an acid , traditionally buttermilk.

The chocolate flavour is subtle, not dominant. The main event is the cream cheese frosting.

FACT 4 - The crumb coat is what separates professional-looking cakes from homemade ones.

The thin first layer of icing that seals the cake before the final decoration is called a crumb coat.

Skip it and your final layer picks up crumbs and looks messy. Do it right and the final finish is clean and smooth.

FACT 5 — In Lagos heat, a cake can start sweating within 20 minutes outside of a cool environment.

This is why timing your cake collection or delivery matters. A cake that looks perfect when it leaves the baker can look significantly different an hour later in the heat if it is not handled correctly.

Fondant or buttercream? This is the cake debate nobody ever finishes. Here is where I stand.

Every baker gets asked this question eventually.

And every customer has a strong opinion.

So let me settle it , at least from my own corner.

FONDANT
Looks incredible. Smooth, clean finish. Can be shaped, sculpted, and painted into almost anything. The reason some cakes look like actual works of art.

The catch , fondant is not for everyone's taste. It is sweeter and has a texture that some people peel off entirely before eating their slice.

BUTTERCREAM
Tastes better. Almost universally. Creamy, rich, and it pairs with the cake itself instead of just sitting on top of it.

The catch , it is more temperature-sensitive in Lagos heat. And it has limits in terms of elaborate sculpted designs.

MY HONEST ANSWER?

It depends on the occasion and the guest profile.

For a wedding where the photos matter as much as the taste , fondant accents with a buttercream base gives you the best of both worlds.

For a birthday where the cake is going to be eaten by a crowd who just want it to taste amazing , buttercream all the way.

For an intimate celebration where the person loves food more than aesthetics , buttercream. Every time.

Why we only take a limited number of cake orders each week , and why that is actually good for you.

Some customers ask us why we do not take unlimited orders.

It is a fair question.

Here is the honest answer.

Every cake we make at Debby Paradize Koncept is made by hand, from scratch, with full personal attention from start to finish.

There is no production line. There is no team of five bakers working in a factory.

There is one baker , me , who personally mixes, bakes, fills, crumb coats, decorates, and checks every single order.

That level of personal attention is exactly why our customers keep coming back and referring their friends.

But it also means there is a limit to how many cakes can be done properly in one week.

When we limit our orders , here is what every customer gets:

A baker who is not exhausted and rushing your order on a Friday night.

A design that has been thought through carefully ,not thrown together.

A cake that has been checked before it leaves our hands , not sent out and hoped for the best.

Personal communication throughout the process ,not radio silence until delivery.

We could take more orders and earn more money.

But we would lose what makes our work worth choosing in the first place.

Choosing a cake flavour for a large event is harder than people think. Here is a simple guide that helps.

When you are ordering a cake for a celebration with 50, 80, or 100 guests , the flavour decision matters more than most people realise.

Here is a simple guide:

FOR MIXED AGES — children and adults together
Vanilla sponge with Swiss meringue buttercream is the safest and most universally loved choice. Not too sweet. Not too plain. Works for everyone from age 5 to 75.

Tell me the most unforgettable cake you have ever seen at a celebration , and what made it stand out.

I ask this question because the answers always surprise me.

Most people expect the answer to be about decoration. Elaborate fondant work. Impressive tiering. Intricate sugar flowers.

But when I ask people what made a cake truly unforgettable , the answer is almost always about feeling.

The wedding cake order that made me cry in my kitchen , and why I am glad I took it.

She called me on a Tuesday.

Her wedding was on Saturday.

She had ordered a cake from somewhere else weeks ago and they had just cancelled on her , four days before her wedding.

She was panicking. She was in tears on the phone.

I had never done a wedding cake in four days before.

My first instinct was to say no.

But I heard something in her voice that stopped me.

Not just panic. Heartbreak.

She had planned this day for months. And now one of the most visible parts of it was falling apart.

I said yes.

I worked on that cake for three days straight. Longer hours than I had ever put into a single order.

On the morning of her wedding I delivered it personally.
