Recipe for Jellof rice with chicken
Here's a recipe for Jellof rice with chicken that serves 4-6 people:
Ingredients:
For the chicken:
- 1 kg chicken pieces (legs, thighs, wings, breasts)
- 1 teaspoon curry powder
- 1 teaspoon thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons vegetable oil
For the Jellof rice:
- 2 cups long-grain rice
- 2 cups water
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 2 large tomatoes, blended
- 1 large red bell pepper, blended
- 1-2 scotch bonnets (depending on desired heat level), blended
- 1 teaspoon curry powder
- 1 teaspoon thyme
- Salt and black pepper to taste
- 2 seasoning cubes (optional)
Instructions:
1. Prepare the chicken: Season the chicken with curry powder, thyme, salt, and black pepper. Heat oil in a pan and fry the chicken until golden brown. Set aside.
2. Cook the Jellof rice: Heat oil in a large pot and sauté the chopped onion until fragrant.
3. Add blended mixture: Add the blended tomatoes, red bell pepper, and scotch bonnets. Cook until the mixture is well fried and the oil starts to separate.
4. Add spices and chicken: Add the curry powder, thyme, salt, and black pepper. Stir well and add the fried chicken.
5. Add rice and water: Add the rice and stir well to combine with the tomato mixture. Add 2 cups of water and bring to a boil.
6. Simmer: Reduce the heat to low, cover the pot, and simmer for 20-25 minutes or until the rice is cooked and the liquid has been absorbed.
7. Serve: Serve hot and enjoy! 5th
