Yoghurt Loaf Cake
Ingredients
β’ 1Β½ cups (190g) all-purpose flour
β’ 2 tsp baking powder
β’ ΒΌ tsp salt
β’ 1 cup (200g) granulated sugar
β’ 3 large eggs, room temperature
β’ Β½ cup (120ml) vegetable oil (or melted butter)
β’ 1 cup (240g) plain yogurt (Greek or regular, unsweetened)
β’ 2 tsp vanilla extract
β’ Zest of 1 lemon or orange (optional, for flavor)
Instructions
Preheat oven to 175Β°C (350Β°F). Grease and line a loaf pan with parchment paper. In a bowl, whisk together flour, baking powder, and salt.
In another bowl, whisk sugar and eggs until light and slightly thickened. Add oil, yogurt, vanilla, and citrus zest if using, mixing until smooth.
Gently fold the dry ingredients into the wet mixture until just combinedβdo not overmix. Pour batter into the prepared loaf pan and smooth the top.
Bake for 40β50 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
For extra flavor, you can brush the warm loaf with a simple lemon glaze (powdered sugar + lemon juice).
