COCONUT FLAKES
There many things coconut can be used to produce, one of them is coconut flakes. This coconut flakes can be used for decorating cake, parfaits and can be eating as snacks.
In preparing coconut flakes all you need is a mature coconut, vegetable peeler or knife, oven, dehydrator.
METHOD FOR MAKING COCONUT FLAKES
Step1: use harmer or a stone to hit the middle of coconut, twisting it as you hit. The coconut will start to crack, you can then open it over a bowl to drain the coconut water.
Step2: use the coconut water to rub the body of that coconut (This is done for easy removal of coconut flesh from the shell) . Insert the knife to the edges in-between the flesh and work your way around the coconut and it will eventually come loose and come out of the shell.
Step3: start by peeling the brown skin off the coconut using a vegetable peeler or knife, then rinse the white flesh. Using either a vegetable peeler or knife, peel the coconut into chips/ flakes.
Step4: Dry the flakes, if using oven method, spread the coconut flakes in a single layer on a large baking sheet and dry on a low heat for almost an hour. It may take longer depending on your oven. Check after 30 minutes, give them a shake and then place back to the oven and check every 10 minutes to stop them from roasting or burning. You can check by breaking one if it break easily, it is done and can be bring out of the oven. If you want them roasted leave it in the oven for more time and allow it to be golden brown before bringing it out of the oven.
When it is out of the oven, allow it to cool completely before transferring it to an airtight container to store.
STORAGE
unsweetened dried coconut flakes can be stored in an airtight container at a room temperature for 6 months or within the fridge for 8-10 months and freezer for 12 months.
Flavoured coconut flakes shelf life vary depending on what flavour used.
SWEETENED COCONUT FLAKES
Sweetened coconut flakes can be made using the same method as above. In this case you will need 2Tbsp of powder sugar of your choice, 1Tbsp of oil and 11/2 - 2 Tbsp of water per cup of coconut flakes.
Combined all the ingredients in a bowl and stir thoroughly to coat the coconut, then set aside for 10 - 15 minutes to allow it to absorb liquid. Then dry it in the oven. Once it is dried or roasted depending on how you want it. Allow it to cool completely and stored it in a airtight container
