Crunchy Sesame Ginger Chicken Slaw😋
Ingredients
For the Chicken:
2 boneless, skinless chicken breasts
1 tbsp olive oil
½ tsp garlic powder
½ tsp ground ginger
Salt and black pepper, to taste
For the Crunchy Slaw:
3 cups green cabbage, thinly shredded
1 cup purple cabbage, thinly shredded
1 cup shredded carrots
½ red bell pepper, thinly sliced
3 green onions, sliced
2 tbsp fresh cilantro, chopped
2 tbsp toasted sliced almonds (optional for extra crunch)
1 tbsp sesame seeds
For the Sesame Ginger Dressing:
3 tbsp rice vinegar
2 tbsp low-sodium soy sauce
1 tbsp honey
1 tbsp sesame oil
1 tsp freshly grated ginger
1 small clove garlic, minced
2 tbsp olive oil
Directions
Step 1: Cook the Chicken
Season chicken with salt, pepper, garlic powder, and ground ginger.
Heat olive oil in a skillet over medium heat.
Cook chicken 5–6 minutes per side until golden and fully cooked (internal temp 165°F / 74°C).
Remove from heat, rest 5 minutes, then slice thinly.
Step 2: Prepare the Slaw
In a large bowl, combine green cabbage, purple cabbage, carrots, red bell pepper, green onions, and cilantro.
Toss to evenly distribute ingredients.
Step 3: Make the Dressing
In a small bowl, whisk together rice vinegar, soy sauce, honey, sesame oil, grated ginger, garlic, and olive oil until smooth.
Step 4: Assemble
Add sliced chicken to the slaw mixture.
Pour dressing over and toss until well coated.
Sprinkle toasted almonds and sesame seeds on top for crunch.
To Serve
Serve immediately for maximum crisp texture.
Also delicious chilled for 20–30 minutes to allow flavors to blend.
Great on its own, in lettuce cups, or stuffed into wraps.
