You put your cake in the oven looking beautifulβ¦ π
You wait patiently. The aroma fills the kitchen. You check it and think, βThis is going to be perfect!β
Then you take it out, and a few minutes laterβ¦ BOOM! π©
The beautiful, well-risen cake has a sunken middle.
If this has ever happened to you, don't worry. You're definitely not alone!
A cake sinking in the middle is one of the most common problems bakers experience. And thankfully, in most cases, there's a reason β and a solution.
π° 1. Your Oven Temperature Is Too Low
A cake needs enough heat to set its structure as it rises.
If the oven isn't hot enough, the cake may rise beautifully at first but fail to develop enough structure to hold itself up.
What to do:
Always preheat your oven properly and, where possible, use an oven thermometer rather than relying only on the oven dial.
π₯ 2. You Used Too Much Leavening Agent
More baking powder or baking soda doesn't necessarily mean a taller cake!
Too much leavening can make the cake rise rapidly before its structure is strong enough to support it. Once it comes out of the oven, it can collapse.
Measure your ingredients accurately. Baking is chemistry, so don't turn a teaspoon into a tablespoon because you want extra height! π
πͺ 3. You Opened the Oven Too Early
This is a big one!
When your cake is still developing its structure, opening the oven door can cause a sudden drop in temperature.
That beautiful rise can quickly turn into a sunken centre.
Try to resist the temptation to keep checking. Wait until the cake has set sufficiently before opening the oven.
π₯£ 4. Your Batter Has Too Much Liquid
Adding extra milk, water, eggs or other liquids because the batter looks too thick can upset the recipe's balance.
The cake may struggle to set properly and can collapse in the centre.
Follow your recipe measurements carefully.
