No-Bake Oreo Cheesecake with Strawberry Sauce

Ingredients

For the Crust
3 cups Oreo crumbs (about 30 cookies, filling included)
5 tablespoons melted butter

For the Cheesecake Filling
500 g cream cheese (room temperature)
1 cup powdered sugar
1 teaspoon vanilla extract
1Β½ cups cold heavy whipping cream
1 cup crushed Oreo pieces

For the Strawberry Topping
1 cup strawberry jam or strawberry sauce
Β½ cup fresh strawberries (optional)

For Decoration
6–8 whole Oreos
Extra whipped cream
Extra crushed Oreos

Instructions

Mix the Oreo crumbs with melted butter until it resembles wet sand. Press firmly into the bottom of a 8-inch springform pan. Refrigerate for 30 minutes to set.

In a large bowl, beat the cream cheese until smooth and creamy. Add powdered sugar and vanilla extract and mix well.

In a separate bowl, whip the cold heavy cream until stiff peaks form.

Fold the whipped cream gently into the cream cheese mixture. Add crushed Oreos and mix lightly.

Spread the filling evenly over the chilled crust and smooth the top. Refrigerate for at least 6 hours or overnight until fully set.

Warm the strawberry jam slightly and pour over the chilled cheesecake, allowing some to drip down the sides.

Decorate with whole Oreos, whipped cream swirls, and extra cookie crumbs.

Chill again for 30 minutes before slicing for clean cuts.

Orange Yoghurt Cake

Ingredients
2 cups (250g) all-purpose flour
1 cup (200g) granulated sugar
1 cup (250g) plain yoghurt (room temperature)
Β½ cup (120ml) vegetable oil
3 large eggs (room temperature)
2 tablespoons fresh orange zest
Β½ cup (120ml) fresh orange juice
1Β½ teaspoons baking powder
Β½ teaspoon baking soda
ΒΌ teaspoon salt
1 teaspoon vanilla extract

Instructions

Preheat your oven to 170Β°C (340Β°F). Grease and line one 8-inch or 9-inch round cake pan.

In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

In another large bowl, whisk the eggs and sugar together until light and slightly fluffy. Add the yoghurt, vegetable oil, orange juice, orange zest, and vanilla extract. Mix until smooth and well combined.

Gradually add the dry ingredients into the wet mixture and gently fold until just combined. Do not overmix.

Pour the batter into the prepared pan and smooth the top.

Bake for 35–45 minutes or until a toothpick inserted in the center comes out clean.

Allow the cake to cool in the pan for about 10–15 minutes, then transfer to a wire rack to cool completely.

Optional Orange Glaze

1 cup (120g) icing sugar
2–3 tablespoons fresh orange juice

Mix together until smooth and drizzle over the cooled cake.
