Jollof rice is our most beloved dish. But there are things even experienced home cooks get wrong every time.
Let me fix that today. 🍚

The 5 things that separate GREAT jollof from average jollof:

1️⃣ YOUR BASE MATTERS MOST
Blend: tomatoes, red bell pepper (tatashe), scotch bonnet, onion. Cook down completely until the paste is dry before frying.

2️⃣ TOAST YOUR SPICES IN THE OIL
After frying your paste, add your seasoning -curry, thyme, bay leaves to the HOT oil BEFORE adding onion. 30 seconds. It wakes up the flavour completely.

3️⃣ THE RIGHT RICE RATIO
For every cup of washed rice, use 1.5 cups of stock (not water). Stock = flavour in every grain.

4️⃣ SEAL IT AND LEAVE IT
Once you add the rice, cover tightly with foil THEN the lid. This traps steam and cooks the rice evenly. No lifting the lid for at least 20 minutes.

5️⃣ THE SMOKY FINISH (Party Jollof Secret)
In the last 5 minutes, turn heat to HIGH for exactly 3 minutes. This creates the bottom crust — the 'party jollof' smokiness everyone loves.

That's it. No more mushy, pale, flavourless jollof. Ever again. 🎉
