Gateau basque - basque cake - biskotxa is a typical dessert from the French basque region bordering Spanish Basque Country. It is made from a delicious flaky pastry enriched with egg yolks and can have different fillings. I like them all. This one has pastry cream and black cherry jam which is very traditional from that region. I’ve often smelled, tasted and admired them when strolling through beautiful St Jean de Luz. On egin!
