Today, we celebrate Simla :the heart and soul of Tifi Simla.

Many have asked, "Why Tifi Simla?"

It's a culinary tribute to my mother :my pillar, my motivation, and the reason this page exists.

She was always a fine cook, and she loved nothing more than hosting, or sharing her cakes and curries with anyone at her table.

I grew up in a kitchen filled with our own little rituals, and that's where my passion was fuelled.

Sunday was for her famous gâteau quatre-quarts.
Saturday night was sacred — plat au pain, without fail.

How could anyone not fall in love with what Simla was making?

Vegetarian food doesn't need to be boring... does it?

This spread says it all ; smoky, char-grilled paneer swimming in a rich tikka masala, rice named after Mum herself (because some recipes deserve her name on them), and a garden salad that's anything but an afterthought.

Every plate at Tifi Simla proves that "vegetarian" and "flavourless" were never meant to go together. Bold spices, slow simmering, fresh ingredients : that's the only way we do it.

Winter Comfort: Venison Curry & Salmon Blanquette 🍲

Winter is all about comfort food and Mum always nailed it.

She believed good food should nourish, whether it's a curry or a stew. That belief is the heart of everything we do at Tifi Simla, and today's spread honours it in two very different ways.

A deep, warming Venison Curry : rich, spiced, slow-simmered the way she'd have wanted it.

And alongside it, a Salmon Blanquette : silky, delicate, comforting in its own gentle way.

Two worlds, one philosophy: nourish first, always.

One of my all-time favourites ; and this one's for you, Mum.
Your Bengali roots run through everything I cook, but this dish especially carries your spirit. Every grain, every spice, is a little tribute to where we come from.

And because Tifi Simla is always about adding a little something of my own...

I paired it with an Eggplant Raita ; my personal twist on tradition.

Cool, creamy, and just a little rebellious. I think you'd have loved it, Mum. 💛
