Broccoli goat cheese tart
Enjoy and tell me what do you think 😀😀
• 1 roll of shortcrust pastry
• 1 head of broccoli
• 2 eggs
• 20 cl of crème fraîche
• 1/2 log of goat’s cheese
• 75 g chopped parsley
• Salt pepper
• Toasted pine nuts

Wash and cut the broccoli florets into small pieces. Boil for 10 minutes and dry them on absorbent paper.

Spread the dough in a tart pan and prick the bottom with a fork.

Mix the eggs, crème fraîche and parsley. Salt and add pepper to taste.
Place the broccoli on the tart base. Pour in the cream-egg mixture. Arrange a few slices of goat cheese on top.

Cook for approximately 30 minutes at 200°C.

Sprinkle the toasted pine nuts on the tart.

Chocolate cake

For the Génoise:
• 5 eggs + vanilla or orange or lemon zest
• 150 g caster sugar
• 135 g of flour
• 15 g cocoa powder
• 10 g butter
• 10 g flour
For the Ganache:
• 200g dark chocolate
• liquid cream 20 cl
For the Frosting:
• 125 g of icing sugar
• 1 tbsp. softened butter
• 1 tbsp. cocoa powder
• 2 tbsp.. lukewarm milk

For the sponge cake:
Preheat the oven 200°C
Whisk the eggs and sugar until frothy
Mix the flour and cocoa together, sift and gently add to the mixture.
Pour into a buttered and floured mold and bake for 20 minutes (check the cooking with a knife which should come out without a trace of the cake)
Let cool

For the ganache:
Cut the chocolate into small pieces
Boil the cream and add the chocolate little by little, mixing gently with a wooden spoon.
Leave to cool

For the icing:
Pour the icing sugar, butter and cocoa powder into a bowl.
Place the latter in a bain-marie and add the milk.
Beat with an electric whisk until you obtain a smooth, shiny cream.

Cut the cake into 2 or 3 discs. Between each disc put a layer of ganache.
Pour the icing quite hot over the cake and let it coat all the chocolate
Leave to cool for at least 45 minutes.
Excellent as a birthday cake!!

Spaghetti bolognese in a muffin tin

In general, When we organize a dinner we avoid spaghetti Bolognese. Because it’s too simple and not original enough. And yet, with this recipe you will change your mind about your menu! And, you will be able to eat one of your favorite dishes while impressing your guests. And above all by delighting them!

For 12 muffins
170g spaghetti
12 meatballs (or minced meat) already cooked
1 and a half tablespoon of olive oil
1 and a half small bowl of grated parmesan
Tomato sauce
Olives (Optional)
Oregano
Cooking spray (oil or butter)

In a large pot, cook the spaghetti in boiling water for about 7 minutes. The pasta must remain firm to the bite since it will still cook in the oven.

Place your drained pasta in a bowl and pour in the olive oil. Mix gently and place in the refrigerator for 15 minutes.
Preheat your oven to 190 degrees. Spray your muffin pan with cooking spray.
Take the pasta out of the fridge and pour in the grated parmesan. Mix gently then fill the muffin cups by arranging the dough in the shape of a nest, to create a sort of hollow.
In each hollow, put a tablespoon of tomato sauce, a meatball and cover with a spoon of tomato sauce mixed with oregano and olives. Sprinkle with grated cheese.

Bake for about 20 to 25 minutes in the oven preheated to 190 degrees beforehand. Let cool for a few minutes before serving.

Mushrooms croquettes
These vegan mushroom croquettes are the typical Spanish tapa. The outside is golden brown and crispy while the inside is smooth and creamy
Eat them alone or with your favorite dipping sauce!

• ¼ cup olive oil, divided
• ½ onion diced
• 2 cloves of garlic minced
• 215 g. mushroom finely diced
• 75 g. flour
• 650 ml. milk
• 120 ml. vegetable stock
• Salt and Pepper
• 135 g. bread crumbs
• Oil for frying

Fry the onion in 1 tablespoon of oil until transparent then add the garlic. Fry until soft and fragrant. Remove.
Fry the mushrooms. Once browned, season with salt and pepper and set aside.
Combine 400 ml of the milk with the vegetable stock.
In a pot heat 3 tablespoons of olive oil over medium heat. Little by little, sift in the flour, stirring it in as you add it. Allow it to cook, stirring constantly, until the raw flour smell goes away – a minute or two.
Add a small amount of the milk-stock mix and whisk it really well. At first it will evaporate but keep adding the liquid little by little, whisking constantly, until it starts to come together into a sauce. To avoid lumps you really need to whisk it! Once all the milk has been added, keep whisking while it comes to a simmer, whisking, for a couple of minutes until it’s thick. Remove from the heat and stir in salt and pepper to taste, the mushrooms, onion, and garlic. Transfer to a dish and let it cool to room temperature. Once cool, cover and refrigerate until cold.
When you’re ready to fry, heat oil for deep frying over medium heat.
Put the remaining milk in a bowl and the breadcrumbs in another. Take about a teaspoon of the filling and roll it into a log shape. Cover it in breadcrumbs, then dip it into the milk and back into the breadcrumbs once again.
Fry in batches of 5 or 6, flipping as necessary, until golden brown. Remove to a towel-lined plate to drain.
Serve. A yummy appetizer!!!

Banana, Nutella and Halawe Tart

Full of taste, this amazing tart is a delicacy for all. It is a mixture of flavors melted with the chocolate and all spread on a delicious hazelnut homemade short crust

Ingredients
• 250 g flour
• 50 g hazelnut powder
• 100 g sugar
• 150 g butter
• 1 egg
• A pinch of salt
• 1 teaspoon vanilla

• Nutella
• 3 bananas
• 100 g Halawe
• Hazelnut

Directions
Mix the ingredients with the cold butter and resembles. When the dough starts to clump together, wrap it in cling film and let it rest in fridge for at least 1 ½ hours.
Cook the dough until golden in the oven at 180 °C.
Once cold, spread the chocolate. Cover with the banana cut in slices. Sprinkle the Halawe, the hazelnut then put a thin layer of chocolate.
Amazing taste.
