The initiative documents maize-based staple foods and practices across Yucatán, working closely with local Knowledge Keepers to preserve, share, and celebrate their cultural heritage through field research and storytelling.
This is the last in a series of stories highlighting the Knowledge Keepers at the heart of the project.

🍞𝐒𝐨𝐜𝐨 – 𝐌𝐞́𝐫𝐢𝐝𝐚
Founded by Andrés Preve in 2018, Soco is an artisanal bakery rooted in creativity, care, and technical craft. Known for its sourdough breads, Soco also offers breakfast and transforms into a space for tapas and focaccias in the evening. Every item is made from scratch daily, using traditional methods and high-quality ingredients. For Preve, baking is not only a culinary discipline but a form of personal expression and problem-solving—where quality is measured by what he’d proudly serve at his own family table.

Founded by Antonio Trujillo and inspired by his training in San Cristóbal de las Casas, Escargot blends Mexican and French baking traditions. Since 2010, this artisanal panadería has offered breads that fuse local ingredients with European techniques—an everyday gesture of cultural dialogue. With three locations in Mérida, Escargot is a living expression of how baking traditions adapt, merge, and evolve with the communities they serve.

🍞 𝐏𝐚𝐧𝐚𝐝𝐞𝐫𝐢́𝐚 𝐄𝐥𝐞𝐧𝐚 𝐕𝐚𝐥𝐞𝐬 – 𝐌𝐞́𝐫𝐢𝐝𝐚
Tracing its roots back to 1865, Pan Elena Vales carries the legacy of one of Yucatán’s earliest wheat bakers—Elena Vales de Castillo. Established at a time when maize dominated the local diet, this family-run bakery introduced new tastes and techniques while remaining deeply rooted in local history. Today, under the guidance of Pedro Ángel Castillo Castellanos, it blends heritage and modernity, continuing to share its storied breads with new generations.

Founded by Abril Batún and Natalia Sánchez, this intimate slow food restaurant near Parque La Plancha is a creative and community-driven space. With only three tables, a minimalist setting, and a focus on native maize, the restaurant offers a deeply personal culinary experience that supports not only local farmers, but also the founders’ artistic projects. Through their commitment to criollo ingredients and thoughtful preparation, they reimagine maize as a canvas for cultural and creative expression.

Kool Kaab is part of Traspatio Maya, a grassroots network of rural producers committed to preserving the milpa system and the biodiversity of native maize. Operated by the Haciendas del Mundo Maya Foundation, Kool Kaab functions as both a molino and a culinary hub where criollo maize is transformed into fresh tortillas and traditional dishes. Beyond food, it represents a powerful model for seed conservation, sustainable income, and community empowerment.

Kiiwajj is a community cooperative of Maya women dedicated to the nixtamalization and handmade preparation of tortillas—especially for panuchos. For over a decade, they’ve protected ancestral torteo techniques while sustaining local economies. In a context of frequent power cuts and rural challenges, their labor ensures the survival of traditional methods and the everyday presence of maize culture in family kitchens.

🌽 CKF will present its latest contribution to the Breads of the Creative Cities initiative: “𝐋𝐚 𝐓𝐫𝐚𝐝𝐢𝐜𝐢𝐨́𝐧 𝐝𝐞𝐥 𝐏𝐚𝐧 𝐝𝐞 𝐌𝐚𝐢́𝐳 𝐞𝐧 𝐌𝐞́𝐫𝐢𝐝𝐚 𝐲 𝐘𝐮𝐜𝐚𝐭𝐚́𝐧”. The project documents the region’s maize-based breads and staple foods, working in close collaboration with local Knowledge Keepers to create open-access archives, field research tools, and storytelling frameworks.

At a time when food systems face both cultural erosion and environmental pressure, this presentation reaffirms CKF’s belief that bread—and by extension, staple food knowledge—can act as a bridge between tradition and transformation. From the milpas of Yucatán to the kitchens of local cooks, heritage and innovation converge to 𝐩𝐫𝐨𝐭𝐞𝐜𝐭 𝐦𝐞𝐦𝐨𝐫𝐲, 𝐞𝐦𝐩𝐨𝐰𝐞𝐫 𝐜𝐨𝐦𝐦𝐮𝐧𝐢𝐭𝐢𝐞𝐬, 𝐚𝐧𝐝 𝐩𝐫𝐨𝐦𝐨𝐭𝐞 𝐬𝐮𝐬𝐭𝐚𝐢𝐧𝐚𝐛𝐥𝐞 𝐩𝐫𝐚𝐜𝐭𝐢𝐜𝐞𝐬. The work in Mérida continues a wider effort, seen recently in Venice and Jeddah, to position food not just as nourishment, but as a profound language of dialogue among cultures.
