Chicken Tikka Platter Recipe.......😋😋😋
Creamy Malai | Herby Hariyali | Fiery Tandoori | Tangy Achari
Served with Green Chutney & Imli Dip......
Basic Prep for All Marinades:
• 500g Boneless Chicken (cut into cubes)
• Divide into 4 equal portions (125g each) for each tikka flavor

✨ 1. Creamy Malai Tikka
Ingredients:
• 125g chicken
• 2 tbsp Fresh Cream
• 1 tbsp Hung Curd (thick yogurt)
• 1 tsp Ginger-Garlic Paste
• 1/2 tsp White Pepper
• 1/4 tsp Garam Masala
• 1 tsp Lemon Juice
• Salt to taste
• Grated cheese (optional, 1 tbsp)
Method:
Mix everything, marinate chicken for 1 hour, then grill or pan-fry until cooked and slightly golden.

🌿 2. Herby Hariyali Tikka
Ingredients:
• 125g chicken
• 1/4 cup Coriander Leaves
• 1/4 cup Mint Leaves
• 2 Green Chilies
• 1 tbsp Yogurt
• 1 tsp Ginger-Garlic Paste
• 1/2 tsp Cumin Powder
• 1/2 tsp Lemon Juice
• Salt to taste
Method:
Blend greens into a paste, mix with yogurt and spices, marinate chicken for 1 hour, and cook until juicy and charred.

🔥 3. Fiery Tandoori Tikka
Ingredients:
• 125g chicken
• 2 tbsp Yogurt
• 1 tsp Ginger-Garlic Paste
• 1/2 tsp Red Chili Powder (Kashmiri for color)
• 1/4 tsp Turmeric Powder
• 1/2 tsp Garam Masala
• 1/2 tsp Coriander Powder
• 1 tsp Lemon Juice
• Salt to taste
• Few drops of red food color (optional)
Method:
Marinate for at least 1 hour. Grill, pan-fry, or bake until crisp and red on the outside.

🌶️ 4. Tangy Achari Tikka
Ingredients:
• 125g chicken
• 2 tbsp Yogurt
• 1 tsp Ginger-Garlic Paste
• 1/2 tsp Pickle Masala (or any mango/achar masala)
• 1/4 tsp Fennel Seeds (crushed)
• 1/4 tsp Mustard Seeds (crushed)
• 1/4 tsp Kalonji (Nigella seeds)
• Salt to taste
• 1 tsp Lemon Juice
Method:
Mix marinade, coat chicken, let it sit for 1 hour, and cook until juicy and spiced with that achari zing.

🍽️ Serving Suggestions:
• Plate all four chicken varieties beautifully.
• Serve with Green Chutney (mint + coriander) and Imli Dip (tamarind sweet chutney).
• Add onion rings, lemon wedges, and naan on the side.
