Oversee the kitchen operations in the absence of the Head Chef.
Prepare a wide variety of items such as cakes, tarts, brownies, bread etc. following recipes.
Have input on creating new and exciting desserts to add on the menu and to engage customers.
Decorate pastries and cakes using various techniques to ensure the presentation is unique and beautiful.
Maintain stocks for baking ingredients and make orders within budget.
Check the quality of material and condition of equipment and devices used for baking and cooking.
Guide and motivate pastry assistants and bakers to work more efficiently.
Identify and notify any recruitment needs.
Maintain a clean and orderly cooking station and adhere to health and safety standards.
Inspect the cleanliness of work areas, tools, and equipment.
Check production schedules.
Oversee junior team members as necessary.
Maintain up-to-date knowledge about pastry and cake art.
Ensure excellent quality throughout dessert products.
Report all equipment problems and maintenance issues.
Encourage and build mutual trust, respect, and co-operation among team members.
Flexible to work schedules and hours.
To ensure mixing of various ingredients according to the requirements of the product.
To ensure proper measurement and proportion of flour & other ingredients.
To ensure all raw & cooked materials are properly utilized before their date of expiry or perishability.
To use proper scales and containers for correct measurements for mixing.
To Prepare dough pans, molds, & sheets for baking dough/sponges etc in the oven.
To do proper rolling and cutting of dough in proper shape as per the requirement of order.
To ensure all utensils. pans, molds, sheets, etc. used in the process are cleaned by the helpers or trainees.
To monitor the work done by down the line chefs/trainees or helpers.
To ensure down the line, chefs/trainees or helpers follow all safety measures, wear gloves, shoes and proper uniform, and follow basic personal hygiene.
Ensure and prepare mise-en-place
Ensure the proper sanitation and cleanliness of surfaces and storage containers.
Inform about the excess food items for use in daily specials.
Informs about the not available items and items available in higher quantities.
Operate kitchen equipment safely and responsibly.
Prepare the daily mise-en-place required for food production.
Prepare and cook food according to recipes, quality standards, presentation standards, and food preparation checklist.
Prepare fresh ingredients for cooking according to recipes/menu.
Responsible for maintaining food logs.
Support down the line chefs in the daily operation and work.
Taste foods to ensure proper preparation and temperature.
To assist in preparing food according to the requirements or recipes or standards, and the specifications of owners.
To assist with packing & accepting store deliveries in case required.
Attend the training being conducted and implemented in daily operations and improve the quality of food.
Monitor & get the cleaning of the pot wash area, floor, utensils, etc. from the assistant, helper, or trainee.
Assist in the deep cleaning of the kitchen.
Monitor the temperature of products, equipment and inform of any AMC or maintenance required in the kitchen or display area.
