For over twenty years, we have collaborated with our customers to champion Irish produce and provide excellent catering solutions. Through Ellan Farm, our vision is to provide a living platform and central hub to connect, educate and regenerate a thriving culinary sector. Our 20-acre organic farm in Ballyneety, Co. Is designed to close the loop on how we grow, serve and return food to the land. Exciting Opportunity: Farm Manager – Ellan Farm, Limerick

Master Chefs is looking for an experienced Farm Manager to lead operations at Ellan Farm, Ballyneety, Co. Limerick.

This is a unique opportunity to take full ownership of an expanding organic production farm directly connected one of Ireland’s leading culinary and catering operations.

In this role, you can expect:

- Full autonomy in managing all aspects of day-to-day farm operations.

- Direct monthly updates with the Master Chefs CEO.

- Ongoing collaboration with our Executive Head Chef to align crop plans with menu development.

- The chance to shape our farm-to-fork journey through sustainable and seasonal production in our onsite 6,000 sq ft processing facility. 

We’re seeking a motivated professional with a strong track record in organic farming, leadership and commercial awareness.

Today was Healthy Heart Day at Secours with a special Valentine’s inspired lunch focused on nourishment and flavour.

The team enjoyed a selection of delicious mains, vibrant freshly prepared salads and a few thoughtful sweet treats for the sweethearts.

Themed highlights included a fresh mixed berry & yoghurt smoothie and a very popular Healthy Heart Truffle made with raspberries, flaxseeds, almonds, dark chocolate, maple and coconut. Focusing on natural sweeteners instead of refined sugars.

We’re incredibly proud to share that Master Chefs has won Excellence in Sustainability at the , presented last night at the Crowne Plaza Hotel, Dublin.

This award reflects the consistent, often behind the scenes efforts of the entire Master Chefs team, who work every day to embed sustainability into how we plan, deliver and evolve our operations. It is a collective achievement and one we are extremely proud of.

We would also like to thank our suppliers, partners and clients for their continued support and shared commitment to doing things better.

This award reinforces our ongoing commitment to sustainability - not as a one off initiative, but as a core principle guiding how we operate now and into the future.

We’re incredibly proud that Master Chefs has been named a finalist in this year’s Event Impact Awards, shortlisted for Excellence in Sustainability.

To be recognised alongside such well established organisations is a huge honour and a real testament to the work being done across our teams. Being listed with fellow finalists Fáilte Ireland, Glenisk and Rásaíocht Con Éireann / Greyhound Racing Ireland & CONSERV Event Specialists makes the achievement even more meaningful.

Dish of the month at the Terrace, University of Limerick 📍

At Master Chefs, top-quality produce is at the heart of our business.

We champion local and use nature as our culinary inspiration, which is reflected in our menus.

One of our favourite new dishes that our Executive Chef team has designed is this falafel plate, which champions organic, seasonal produce which we proudly grow on Ellan Farm. It includes:

- Chickpea, lemon, Ellan Farm garlic and mixed herb falafel
- Infused herb rice
- Ellan Farm seasonal pickles - beetroot, red cabbage, white cabbage kimchi
- Sumac infused carrots
- Beetroot hummus
- Apple and fennel with star anise

Our circular approach and organic farm supports our commitment to quality, and helps us to bring fresh ideas, local produce and flavour to our customers year-round.

Zero Waste Cooking Demonstration at the University of Limerick

This Bank Holiday Monday, our Executive Chef Michelle brought autumn flavours to life with an October themed zero waste cooking demo at the Pavilion Restaurant in the University of Limerick.

Focusing on pumpkins (& butternut squash as an year round alternative), Chef Michelle showcased how to make the most of every part of these versatile seasonal favourites, from breaking them down efficiently to creating a quick purée with leftover odds and ends… and even toasting pumpkin seeds for that perfect finishing crunch.

Students from first year to master’s level joined the session, learning new techniques and tasting a delicious trio of dishes:

🎃 Savoury Pumpkin Scones, the perfect pairing with the soup!

🎃 Pumpkin Risotto

A fantastic way to celebrate seasonal produce, reduce food waste, and share knowledge with the University students staying on campus over the long weekend.

Winter is Coming at Ellan Farm!

The fields have just been ploughed to make way for Winter as we plant a mix of buckwheat, green clover and winter rye. It’s a relief to have been able to proceed as planned following last week’s storms and we’re amazed to see the sun still shining through at this time of year, a welcome boost as we prepare the soil for the months ahead.

This next stage reflects an organic way of protecting and nourishing the soil, ensuring continued growth and promoting sustainable farming for future seasons.

Each crop brings its own natural benefits:
·      Green Clover is a natural soil fertiliser that improves soil health by attracting beneficial insects, reducing compaction while retaining moisture. It also supresses weeds through its dense growth.

·      Buckwheat improves soil by acting as a quick-growing cover crop that suppresses weeds, increases organic matter, enhances soil structure, and prevents erosion. Buckwheat also attracts insects improving the soil ecosystem.

·      Winter Rye also offers significant benefits for soil health by suppressing erosion with its ground cover, improving soil structure with its deep root system, scavenging excess nitrogen to prevent leaching while also suppressing weeds.

By working with nature instead of against it, we’re continuing our commitment to organic, regenerative and sustainable farming practices that keep Ellan Farm thriving season after season.

Preserving our harvest, one jar at a time

When Ellan Farm is at the height of the growing season, we make the most of every vibrant vegetable by pickling and fermenting in smaller batches.

Not only does this process extend the shelf life of our organic produce, it means we can share the Ellan Farms flavours long after the season ends.

Why we pickle & ferment:

– Reduces food waste and supports year-round menu creativity
– Retains vitamins, minerals and antioxidants
