Wild Gorse Coconut Seafood Broth 🌿🥥🦪

Light, aromatic and packed with citrus and spice. Let it infuse, don’t rush it.

Note
Use gorse lightly. It’s a mild diuretic and no one wants that!

Ingredients

Spices & aromatics
1 tbsp oil
Zest of 2 limes
3 lemongrass, smashed
1 garlic clove, crushed
1 tbsp cumin seeds
1 tbsp coriander seeds
1 tsp peppercorns
5 green cardamom
1 black cardamom
½ tsp chilli flakes

Coconut base
1 can coconut milk
Handful of wild gorse
1 tsp turmeric
½ tsp salt
10g jaggery or soft brown sugar

Seafood & veg
500g mussels, cleaned
300g prawns
150g mangetout
200g baby corn
200g French beans
Fish sauce

Juice of 2 limes and a dash of fish sauce

Method

Cook spices, lemongrass, garlic and lime zest in oil for 5 mins until fragrant.

Add coconut milk, gorse, turmeric, salt, jaggery and a 1/2 the can of water or stock. Simmer 5 mins, then rest 30 mins to infuse.

In another pot, add mussels and veg. Cover with a lid and cook 5 mins. Strain over the broth.

Add half the lime juice, then prawns. Cover and cook 2 mins.

Finish with remaining lime juice and dash of fish sauce

Serve with basmati rice.
