DIY Marinated Artichoke Hearts

- Recipe -

Ingredients - makes 1L jar:
- 2x 390g tin of artichoke hearts in water
- The rind of one lemon (julienned)
- Small bunch of fresh thyme
- 200ml extra virgin olive oil
- 200ml light olive oil
- 3 large garlic cloves (peeled)
- Salt and pepper

Method:

Drain and rinse the artichokes in a sieve.

In a Kilner jar (or 1L capacity jar) add the remaining ingredients - Slowly mix this before adding artichokes.

Slice artichoke hearts in half, and carefully add to jar.

Slowly invert jar 2/3 times to ensure artichokes are completely coated.

Leave to marinate for at least 10 days, turning every couple of days!

Delicious!!
