We’ve come a long way — and we couldn’t have done it without you 🤍 Every bit of support has meant more than you’ll ever know.

Thank you to everyone who’s lent a hand, trusted us with your events, celebrated birthdays with us, bailed us out when we forgot things, offered advice in tough moments, answered late-night calls to pull me out of the weeds, or simply bought a cocktail during lockdown 🫶

The idea started at the brilliant and very busy learning everything I could about running a business from Jamie — boss, mentor and now dear friend. None of this would’ve happened without him.

In the downtime, we built a bar in my mum’s driveway (and her neighbour’s garage when it rained — thank you Rod & Linda!), from reclaimed pallets, with my mate Steve from — wizard with wood, great bartender and top human 🔨

After two years we went all in, Jan 2020… terrible timing 😅 Then came the pandemic.

To survive, we launched our — vacuum-packed, bar-quality cocktails with garnishes and snacks, delivered every Friday across Cornwall 🍹 Somehow it blew up. It saved us… and shaped us.

Fast forward to today: our cocktails in airports, on major retailers’ shelves, in TV projects and travel publications. Amazing people, collaborations turned into real friendships, and places we never imagined 🌍

Hospitality hasn’t been easy, so I feel genuinely lucky to still be here, doing what I love, with great people, for great people 🤍 It’s flown by — and it still feels like we’re only getting started. We’re just a small business, but I’m incredibly proud and grateful for the journey.

A special thank you to Chelsie — the glue holding it all (and sometimes me 😂) together from the very beginning.

And to my girlfriend — always there through every venture and pop-up, keeping me steady through the ugly bits, designing all our packaging, helping build our newest (and best) bar, talking sense into my wild ideas… and sometimes encouraging them too ❤️

So many more to thank — I hope you know who you are 🙏

The Tom ‘Yum’ Collins 🌶️🍋🍸

We keep our menu roughly 75 / 25 classics to signature recipes, and this is one of our signatures we simply cannot take off. Ever.

Think vodka, lime and soda… but dialled up with fragrant, zesty Thai herbs 🌿☀️
Fresh, bright, and dangerously drinkable.

We start by infusing Colwith Farm Distillery vodka (the best in the land, obviously) with:
🌿 Kaffir lime leaf
🌾 Lemongrass
🫚 Ginger
🌱 Coriander
🌶️ The tiniest touch of chilli

Then we add palm sugar, fresh lime, and carbonate the whole thing to finish ✨

The result?
Super juicy. Ultra zesty. Properly thirst-quenching.
An absolute dream of an aperitif in our opinion 🥂

Mixed with sun, you genuinely cannot lose ☀️🌊

Some days, it really hits us just how lucky we are 🤍✨

These are the places we got to call our “office” this year.
From grand country estates 🌿, to historic castles 🏰, to wild, beachside locations 🌊 with sand underfoot and the sea as the soundtrack.

That’s what we love most about this job.
No two days are the same. No two settings alike. And somehow, each one feels special in its own way.

We’re incredibly grateful to be trusted to bring food, drink and atmosphere to places like these — and to be part of moments people will remember forever 🥂💫

This bad boy never truly ends. Every time we top it up, it’s with a different gin, amaro, and vermouth, slowly building layer upon layer of flavour, depth, and character 🍊🌿🌑

All inspired by produce we’ve grown ourselves — proof that the garden really does lead the way.

Give Peas a Chance 🟢
Home-grown pea–infused gin, cucumber & dill tonic, finished with cucumber and radish straight from the garden. Fresh, savoury, and wildly moreish.

Rhubarb & Custard Spritz 🌸
Rhubarb, elderflower & rosé syrup, spiked with vanilla Aval Dor vodka, topped with Camel Valley sparkling wine. Nostalgic, bright, and dangerously easy to drink.

Peri-Peri Margarita 🔥
White port, oregano, lemon, salt, and smoked paprika sherbet — punchy, savoury, and just the right amount of wild.
