Well FlavourFest, another great weekend, as one of our longest standing dates in our calendar, it was good to be back.It’s always humbling to have regular customers, especially when you’re only in town once a year. A special shoutout to James, as always one of our first customers and of course his family who always take time to come by, buy food and chat. Charles, as always a pleasure to see you!. And of course Dan ,Tim,Jack and Poppy, amongst many other regular customers and friends, with many new visitors to Cut The Mustard.
This year we were invited onto the stage to demonstrate all my seasonings, rubs and flavour profiles.

British Street Food Awards what can i say!??
On a weekend when festival attendance has people talking for all the wrong reasons you guys stepped up and delivered. Massive thank you to the organisers at gunwharf quays Portsmouth for the southern round of British street food awards.

From the people on the entrances handing out the voting slips the security guards and the guys keeping the area clean tidy and the bins emptied ( one of those aspects of an event you never appreciate until it’s not done) the supervisors and managers who every morning went to every stall and asked “ how are you? Are you ok ? Do you need anything?) a simple gesture not unnoticed.

The people who came from near and far to eat drink and enjoy, whether you ate from us or not, whether you voted for us or not, the energy and enthusiasm was incredible.and that carried most of us cooking. Sometimes as a trader you don’t feel and not sure if you’re going to enjoy the event, and find yourself clockwatching until you can bring your vehicle on and pack up. Absolutely no chance!!
To explain, the 17 traders are in a circle with plenty of seating in the centre. Without fail the people are walking around the outside the barriers asking about the food you’re cooking how it’s prepped etc etc. the gates open at 12. For three consecutive days were at 12.01. It was incredible to watch people come straight to our stall yup, this is what we wanted . People wanted to try as many of the traders as possible and really brought into the voting aspect. Usually you watch potential customers do a circuit, check prices mull it over and it an be 30 mins till you makes sale. Not at gunwharf.

To the traders, the comraderie is real…. It is tricky at the best of times you want the sales and you need to turn a profit so there is a cagey element at every event, and whilst that is true especially with a vote and podium finish here, every wants everyone else to do well, I genuinely ate some amazing food, phat boi’s dumplings were outstanding. Oh babu that lamb was insane, stans that was very tasty chicken , burger society enuff said, bey roots awesome.

Absolutely blown away to be invited back to this incredible event.
Gunwharf quays is hosting the southern heat of this year’s incarnation.
It seemed only right that we bring our short ribs to the judges table
These things are whoppers and have gone down a storm across multiple events.
So people of Portsmouth we will be bringing, beef short ribs with burnt orange, tamarind and bourbon
And reverse seared pork with a cumin and maple seasoned bacon jam.
Can’t wait to get the fires lit and enjoying the atmosphere that this event brings

Aaaannd we’re back in the shire….. after what seems like an eternity this weekend sees us back in Devon, when the amazing people at Ivybridge brewing asked us to be part of their anniversary celebrations we are more than happy to oblige. This Saturday 14th march at Glanvilles mill we will be bringing to flavours to match their incredible brews. Short ribs with burnt orange bourbon and tamarind. Charred pork belly, sage. Balsamic onion and sweet chilli, ember roasted aubergine with lentils tomato and tomatoes and of course s’mores. We should be ready for 12

When you’re invited to be part of “blue collar” 10 year anniversary celebration there is only one dish we could bring. Oak smoked pork collar, blueberry and bacon jam…….. yup enjoyed it ……. New dish to the repertoire .
Thank you blue collar for the chance to take part, and of course to your amazing customers, absolutely blown away by the support and kind words. We will return

The final fires of 2025…….. a glitch on my part saw us almost run out of charcoal, luckily. big k stepped in, happy accident in deed. Our Christmas menu saw us bring maple and cranberry pork belly and Christmas baubles ( ground brisket and pork shoulder stuffed in a spiced apple and wrapped in bacon) as well as chestnuts and s’mores
Hope you all enjoyed the festivities and look forward to catching up with everyone in 2026!
