The perfect excuse to use up excess egg whites from custard-making. An incredibly light yet decadent chocolate mousse, folded with glossy whipped egg whites and rich double cream for an airy, melt-in-the-mouth texture. Finished with softly whipped tahini cream for a nutty contrast, and shards of irresistibly moreish sesame brittle for caramelized crunch.
