Chocolate mousse with whipped tahini cream & sesame brittle

The perfect excuse to use up excess egg whites from custard-making. An incredibly light yet decadent chocolate mousse, folded with glossy whipped egg whites and rich double cream for an airy, melt-in-the-mouth texture. Finished with softly whipped tahini cream for a nutty contrast, and shards of irresistibly moreish sesame brittle for caramelized crunch.

I made this rhubarb & custard tart — pure spring on a plate. A buttery shortcrust base filled with silky vanilla custard, layered with vibrant rhubarb compote, topped with a hand-woven poached rhubarb lattice then set with a delicate rhubarb jelly.

Breadcrumbed Aldeburgh sprats seasoned with mustard and cayenne, served with homemade dill and garlic aioli and a generous squeeze of lemon… simply delicious.

The scent of spiced apples and buttery pastry filling the kitchen — pure comfort. A golden lattice top, woven slowly and calmly, using Emmer and YQ flour from for that beautiful depth of flavour. Served warm with a scoop of quince custard ice cream from La Grotta Ices and a splash of double cream… a dream match made in heaven.

Chocolate, hazelnut and brown butter cookies — crisp edge, chewy centre, and exactly the comfort I needed as I pause and breathe in another year.

The first cep of the season!

It’s been an incredibly dry summer here in Suffolk, so finding this beauty felt like a small miracle.

To celebrate: a simple cep carpaccio — wafer-thin slices of raw cep, dressed with olive oil touch of lemon juice, a pinch of salt to taste, and fresh parsley.
