Asian Tuna Crisps
New year, same energy. Fresh food that actually tastes good.

Ingredients:
• Sashimi-grade tuna, finely diced from my beloved
• Baby cucumber, finely chopped
• Spring onion, sliced
• Fresh coriander
• Green chilli, finely chopped
• Kewpie
• Miso Sesame
• Sesame oil
• Yuzu ponzu
• Salt & black pepper
• Crispy chilli oil
• Spring roll paper

Method:
1. Dice the tuna finely and add to a bowl.
2. Add cucumber, spring onion, coriander and green chilli.
3. Dress with Kewpee, miso dressing, a splash of sesame oil and yuzu ponzu.
4. Season lightly with salt and pepper, then finish with crispy chilli oil.
5. Mix gently to keep everything fresh and glossy.
6. Shallow-fry spring roll paper until golden and shape into crispy cups.
7. Spoon the tuna into the cups and enjoy immediately.
