Vindaloo? Not unless I have drunk far too many pints! This isn't on the menu because of it's reputation. It is far from what you think. Yes, it is spicy, ( dont eat the chillies if you want less heat) team it with a mushroom matar bhajee, basmati, fresh chutney, mango chutney, raita? You have a feast.

Working on menus for a Private Chef booking. I think best when I am in the kitchen doing something repetitive. Hand rolling my Swedish Meatballs certainly fits 'repetitive'. Lots of ideas and, something proper yum for my meal stocks (and our dinner). Win win.

Real Kung Po is 100 miles from that. Yes, it does have some chilli- enough for a gentle warmth, and, sweet and sour is part of the sauce, but, just the beginning. Allergens- soy, sesame.

Before my body decided to restrict my diet, I did love HP Sauce - especially with crispy smoked bacon. Couldn't find an alternative that was a.safe, b not .super expensive. c. Just not good.
Can't have isn't something I accept
Colour isn't right yet - still hot, it turns that rich glossy brown in a week.
My adapted Mushroom Ketchup, few tweaks, few more ingredients.... job done. Now I just need to figure out scrambled egg for a Full English.

Yesterday, our Son treated us. We went to Hickory's Smokehouse. If you have any allergies? You are in very safe hands and the staff and food were 5*. However, prepare yourself for a food coma! No cooking today, butterbean salad but, I have stolen some of their menu for an upcoming BBQ. I also have an allergy to not being in the kitchen 🙃

It has been quite a day. Orders flooded in, mostly special cook for specific likes/dislikes, some my vegetarian customer's faves, some cooks just because I haven't got enough of a particular dish to fill the order. My freezer space is limited (oh for a walk in...), I need to balance pre-freeze chill space ( I would love a Blast Chiller too pls!) It has been a long day already and I am not done yet but, as long as I know my Customers have a great meal and happy tums? I would happily have the same day tomorrow x
