"Duck breast, dukka, confit duck leg croquette, sweet corn puree, charred corn salsa, spiced popcorn, jus" 🦆🌽

This was my favorite dish from the Gotland Gin Farm Supper this year. 👌🏻

Local duck breasts were brined for 6hrs to increase their plumpness and carry that seasoning throughout. Paired with those toasted nuts, seeds and spices from the dukka was just delicious. 😋

The corn was local too from Hatherleigh Community Market specifically from the Harvest Workers Co-op and was great to see that in a variety of ways! 🧑🏻‍🌾

Eggs in purgatory 🍳

It was a delightful change cooking breakfast for some clients this week. This time, Italian style 🇮🇹😎

Eggs poached in a fragrant tomato sauce, filled with chicken sausage, peppers, garlic, basil and Parmesan.
This dish was paired with focaccia, pickled Italian veg and cured meats and cheese. It certainly went down well 😋

Another private dinner completed for some wonderful people. I really enjoyed this one in particular as I was given complete control and trust over the menu. 🧑🏻‍🍳

There were 8 vibrant and super punchy courses, which in true Joe fashion I forgot to take pics of it all. 📷😋

Lots of highlights in this menu but the all round consensus was the fresh tuna tartar taco was a winner 👌🏻🐟

I absolutely love any kind of sharing board / antipasti / mezze etc. ♥️
This was our antipasti from our Italian Feast on Sunday at the Devil's stone inn. 🇮🇹

- Tomato and Mozzarella salad (using IOW heritage toms) 🍅
- Homemade rosemary and sea salt focaccia 🍞
- Pickled Italian style veg 🫑
- Marinate olives 🫒
- Nduja Arancini 🌶️

It was certainly a hit that is for sure! It's hard to choose a favorite on here but I'm a sucker for those slightly grilled and pickled courgettes. What are you tucking into first? 😋🍴

Slight lack of content recently! I've just been busy juggling 👨🏻‍🍳 and 👨🏻‍🍼. So anyway, here are some desserts to make up for it 😍.

A trio of Mediterranean themed desserts for the spring banquet over at earlier this month.

- Sicilian orange cake, whipped mascarpone, pistachio crumb. 🍊

- Olive oil chocolate mousse, brandy cherry compote, toasted almond. 🍒

- Honey cheesecake, caramelized fig, meringue. 🍰

A fantastic end to a lovely evening. Which one are you eating first? 😋

This charcuterie board we did over at was just awesome. Any kind of sharing platter and you have my attention. This one in particular was full of local produce...

Cheese from Curworthy and delicious sheep's cheese from 🧀

Cured meats including Gotlands own cured hogget from Beckland Charcuterie 🐑

Just the most delectable olives from 🫒

Punchy balsamic picked eggs from 🥚

All finished off with homemade pickled market veggies, and fresh heritage tomatoes from the Isle of White. 🍅

This certainly went down well, and my only criticism is that I couldn't elbow my way in-between a couple guests and join in! 🍽️
