Thank you for a wonderfully busy week, and I hope you all enjoy your curries. And thank you to all the new customers popping in, all via word of mouth, the very best form of advertising :-)
So much work goes into making a good curry. Every curry takes hours, with many layers of preparation, marination, seasoning, and finally cooking. And this is why I only cook around eight fresh curries per week, they just take so long to make that I run out of time!
I cook everything from scratch and fresh, and I only use whole foods. No pre-made masalas, they're roasted and ground fresh per curry. No base gravy like you find in British Indian curries, for the base I use either fresh tomatoes, cream, yoghurt, coconut milk, or stock. No msg or food colourings. I even filter the water I use for the purist taste.
I produce authentically cooked "desi" Indian cuisine. I do not cook British Indian. My current customer base tastes the difference and appreciate the depth of flavour. I hope all the new customers I met this week can taste the difference as well.
